Kainos is a Greek lexicon for "New". This "New" is not just anything new but new in kind and in contrast to what previously existed, new in quality, different in nature from the old. something that is superior to the old.
From the law of first mention,
Matthew 9:17
[17]Neither do men put new wine into old bottles: else the bottles break, and the wine runneth out, and the bottles perish: but they put new wine into new bottles, and both are preserved.
The new(kainos) is from here "... new bottles, and both are preserved. "
