Wow I had these as a kid when our neighbors would cook for us. They moved away and I haven't had them since. This really takes me back...the taste of the lemon and leaf is nostalgic for something that's not even my culture. I want ro learn how to make this so I can get that same nostalgic flavor back. In the past, people would often stuff grape leaves with vegetables and rice instead of ground meat, especially poor people and during famines. The vegetable ones are my favourite! These ones also look super good!
I love watching your videos. My family makes stuffed grape leaves too. We've never cooked them with meat on the bottom, but now I think I'd like to try that. We usually make a huge pot so we have leftovers for us to all take some home for later. We serve them with rice pilaf and tabouli. When we roll them, we always end up with green finger tips. 😊. So called "sarmale" in Romania, but we have our own version..either sour kraut leaves stuffed, but with minced pork meat or pork+beef mixture..but bigger in measurements. In other regions they use to do with vine grape leaves, but small.
Other and reall name of this dish in türkiye is sarma. In fact we had another dish who called dolma. Those 2 dish name offenly uses wrongly. Even in Türkiye 😂🩵
It's actually not dolma, it is sarma. Some Turks confuse them and I cannot def understand it. Because if you're Turkish and know Turkish then you are gonna understand the names and shouldn't be confused about that. The word 'sarma' means wrapping, meanwhile the word "dolma" is stuffing/stuffed. For this food in the video, the name is should be sarma because you are putting rice mix and wrapping grape leaves. But if you are carved peppers (or a different veg) and take inside off and filled with rice mix then it is dolma (stuffing)

Why you use a Turkish word? Dolma means "filling" in Turkish, like Pepper Dolma, Potato Dolma. This one is not dolma, this is "sarma" means wrapping in Turkish.
The name “sarma” and “dolma” are used interchangeably in Turkish for this dish. Even if you translate it through Google translate, you’ll see that the Turkish words sarma comes from the verb “sarmak” meaning “to wrap/roll” and dolma comes from the verb “dolmak” meaning “to fill” both actions apply to the making of this dish. However, we have another traditional dish made with similar rice ingredient filled into bell peppers, and top is capped with a slice if tomato. That dish requires us to “fill” the bell pepper with the ingredients so we prefer to call only that “dolma”, and use sarma and dolma interchangeably for this dish in the video. If the rice ingredient does not have meat in it, it’s called “yalancı dolma” where yalancı translates to “liar” and in cuisine, it refers to “pseudo” as if without meat, it would be like a fake version of dolma. A fun name to give a food 😂

As an Armenian, whenever my mom makes it (I usually help her with the rolling) she does the same technique you did with putting the plate on top of the dolma while it’s cooking. We usually also add minced garlic to the yogurt and it adds so much flavor when combined with the dolma

Why you use a Turkish word? Dolma means "filling" in Turkish, like Pepper Dolma, Potato Dolma. This one is not dolma, this is "sarma" means wrapping in Turkish.

The name “sarma” and “dolma” are used interchangeably in Turkish for this dish. Even if you translate it through Google translate, you’ll see that the Turkish words sarma comes from the verb “sarmak” meaning “to wrap/roll” and dolma comes from the verb “dolmak” meaning “to fill” both actions apply to the making of this dish. However, we have another traditional dish made with similar rice ingredient filled into bell peppers, and top is capped with a slice if tomato. That dish requires us to “fill” the bell pepper with the ingredients so we prefer to call only that “dolma”, and use sarma and dolma interchangeably for this dish in the video. If the rice ingredient does not have meat in it, it’s called “yalancı dolma” where yalancı translates to “liar” and in cuisine, it refers to “pseudo” as if without meat, it would be like a fake version of dolma. A fun name to give a food 😂

Oh! I love dolma so much❤ I’ll from Saratov (The Russian Volga region with a large population of Tatars). They often cooked dolmas, treated me, as well as all my friends from Azerbaijan and Kazakhstan, Russians also often make dolmas. Even the Jewish from Baku treated me to dolma❤ My Christian Slavic grandmother also made it when we planted grapes in a country house. She also made her own homemade wine 🍷

I have a friend who taught us how to make these they’re so delicious I love Turkish food
As an Armenian, whenever my mom makes it (I usually help her with the rolling) she does the same technique you did with putting the plate on top of the dolma while it’s cooking. We usually also add minced garlic to the yogurt and it adds so much flavor when combined with the dolma
