The Perfect Homemade Suya Spice / Kebab Pepper

- Suya is the term for kebab /Khebab in Nigeria and parts of Ghana. This is very popular on the streets of Ghana. What makes a great suya is no doubt the spice. This delicious peanut based spice is used as the marinade, then dusted on the meat before grilling over charcoal, then served with an extra sprinkle of this delicious mix. I am very picky about my suya spice and so anytime my best friend visits, or I have the opportunity to bring some from Ghana, we order from our favorite Abokyi (means brother in Hausa and all suya sellers are referred to as such). This recipe mimics his so much, but of course, you can't beat homemade so I will say I love mine more and I hope you feel the same way about this.
Ingredients:
1 cup peanut powder
½ cup onion granules (powder)
⅓ cup ginger powder
12 pieces negro peppers (whentea)
3 tablespoons paprika
3 tablespoons cayenne pepper
1 tablespoon black peppercorn
4 pieces calabash nutmeg
3 tablespoons all purpose seasoning
2 teaspoons garlic powder
2 teaspoons aniseed
1 teaspoon salt

If you research satay Malaysian style, you find almost similar ingredients with suya. Satay wet marinade include lemongrass, galangal (aka sand ginger) and sugar (suya is salty I think). Peanut is ingredient in the satay dipping sauce.
Suggest you try using cooked suya meat as a pizza topping ingredient instead of pepperoni. Also add sliced onions as topping. Did pizza with satay meat topping and now a favorite with the family.

My recipe for suya is really similar except I dont use aniseed and I sometimes grind roasted peanuts from the store instead of using the peanut flour. but the peanut flour can be convient. Im usre this recipe is very tasty.
