E.Honda is actually well balanced in terms of story and motivation. Between the Satui no Hado with Ryu, world domination with M.Bison, a desire for justice with Chun Li, Guile, and Charlie, and even comedy relief with Dan, its nice to see fighters who just want to spread his compassion for sumo.
E.Honda has been my favorite since SF2, along with Ryu, Guile and Chun-Li. It would be nice to see him return in Street Fighter 5. As for the next warrior history, put in Retsu or Karin.

Since Guilty Gear is getting more popular now, you can do Sol Badguy, Faust or maybe Zappa or even the Assassin Guild (Venom, Eddie/Zato, Slayer and Millia). Their lore are very interesting to explore that you need at least 2 videos to cover.
