We use a lot of field stone,farmers throw out while plowing the field, from nc mountains. I'm in wilson co nc,closer to the coast. Rake joint it a pointing trowel. Your work looks great!!!!

Why do you chip away at the edges on the stones?
Good question, it’s called “dressing”the stone, every stone has to be dressed to create a even face on the stone and to take out all the imperfections so it gives a nice even finish when built

Why not just do dry stone
A single wythe of dry stone wall would fall down. This is a dry stone effect to look amazing in front of a block wall so that it's relatively thin but also very strong.
