Chicken and waffles is a Southern US tradition. Also, biscuits and gravy. In the North you might see New York cheesecake or french fries with brown gravy. Even older dishes like cottage cheese with peaches or iceberg salad. But diner restaurants in the US are very diverse regionally and an individual owner or cook might create something special.
Chicken and waffles and biscuits and gravy can be eaten throughout the country not just one particular region. I’m on the West Coast and I can get both chicken and waffles and biscuits and gravy. There was one restaurant called Roscoe’s chicken and waffles that has been around since 1975.
I’m from Alabama, chicken & waffles were not ever put together. Our waffles came with bacon & sausage & cheesy buttered grits. And believe me, my grandparents were deep woods, farmers, 30 miles from the nearest town.

So she explained it to me, in between when we were all getting smoked by the Drill Sergeants. When I had two weeks leave and I could go home for a bit I tried her recipe for sausage gravy and biscuits. Lovely. Awesome. One of the best breakfasts ever.
There a Bunch around , you just have to find them , we go to some of them even today ! some of them , Hot Rod car clubs hang out and show their classic cars too !
My mom could use the $100, today is her birthday and my little brother was supposed to undergo open heart surgery yesterday but when they went to intubate him they tore his throat and before they caught it he lost a lot of blood:( they called off the surgery until it heals because they need his throat to heal before they can move on. Who ever reads this please send him a prayer 🙏🏻 ❤
Its so awesome to see America from the same way I, an American, looks at other countries. When I think of tourists in America I normally just think of people from other places IN America visiting a different place in America. Like people going to Florida for vacation.
American diners definitely vary by region. Most will definitely have chicken, burgers, fries, pork chops, pancakes, eggs/omelettes, soup/chili, etc. I've never seen brisket in a diner but maybe they do that in Texas. I always order eggs Benedict if a diner has it.
I'm Texan. I've never seen brisket ON top of a hamburger patty. It sounds interesting though. I've seen ground brisket patty hamburgers and brisket sandwiches of course.

Its a half pound burger with 2 slices of brisket and a huge onion ring topped with the house sauce. Haven't seen any other place here do it though, but I would like to try it.
Oh Yes , Only in Texas , Brisket smothered in a Homemade BBQ sauce with Onions and Pickles and Buns with a bowl of Brisket Beans , mm Good ! and a Cold Dr Pepper to boot ! Did i forget the Beef Ribs ! Oh My Goodness !

That diner was originally not far from where I live… the decor looks pretty authentic ngl. The tiny American flag is incredible 😂 so chicken and waffles is mostly a southern thing. I think all of those foods are definitely American but some of them are regional of that makes sense.
My favorite diner food is the Open-Faced Hot Turkey Sandwich (usually served with turkey gravy, potato fries or mashed, sometimes with stuffing/dressing, and sometimes with cranberry sauce/jelly). I ask for extra gravy and if served with cranberry sauce extra of that, too. Milkshakes are best evaluated by trying the chocolate flavor, not the vanilla; even strawberry will tell you more than vanilla. Save the vanilla ice cream for the root beer float (though most Brits don't care for the root beer flavoring; something to do with toothpaste flavors). You can ask for a Coke or Dr Pepper float instead. Places that serve milkshakes and floats usually give you a long-handed spoon, to eat back the ice cream. This is especially important dealing with the bubbling interaction between the ice cream and the fizzy drink. That burger you shared after the chicken & waffles; they usually provide you this thing called a 'knife'. Even butter knives will cut in half a burger on the bun. Most people sharing a burger do that, cut it in half. In fact, many people cut their burger in half if it's too wide, too tall, or too drippy; it makes it easier to manage the burger with less mess. Proper American Mac & Cheese does not have a cheese-pull; it's meant to be creamy but thick. Some regions in the US add in things like bacon or shrimp or crab or lobster or even shredded chicken. Some cut up hot dogs or small sausages and mix them in. And some cover the top with toasted bread crumbs (au gratin) or crispy fried onions. But you just don't want a cheese-pull when you take a bite of Mac & Cheese. In general, an American Chili Dog is a hot dog (regular-sized or extra-long; not usually a sausage or wurst) fried (not boiled) in a hot dog bun, with or without sauerkraut as the first layer, with catsup &/or mustard &/or relish, then the chili (cheese shredded or sauce, optional). What you were served is a fancy version, just like the corn dogs were a fancy version, only seen in restaurants. It's okay, it's just fuss that such humble fun food doesn't really need (usually such fuss is added to justify a larger price). The Brisket Burger has to be made especially for the UK palette; I've never seen such a think in the US. But that's still within the diner character. Diners have a core menu that every diner serves, the reliable entrees and sides, but they also include local favorites and regional specialties. You get grits and catfish in the south, heavy reliance on cheese in Minnesota and Wisconsin, pecan dishes and beef in Texas, pastrami and corned beef in New York, Cajun flavors and shrimp and crawdads/crayfish in Louisiana, pork and okra in Alabama, etc. So, it makes perfect sense for there to be a Brisket Burger in a UK diner.
I would disagree that hot dogs are not served boiled in US diners. I worked in several diners as a teenager and they definitely boiled the dogs. They would then be kept in a pan of hot water on the side of the grill or one of those hot display cases with the rotating baskets. Also, while brisket burgers are not usually classic diner fare, they are available in lots of restaurants here in the US that specialize in bbq or burgers. Matter of fact, my husband had one just this past week here in CA.
Always love going to a diner. I love eating breakfast or lunch in the booths. Lunch would always be eggs, hash brown, and buttermilk pancakes. For lunch, mostly a burger and fries. Very special place to go to with my family.
