One thing I don't hear most people mention is to always give the seller instructions to leave the car dead cold before you arrive. And then check the exhaust manifold for heat. That way you see and hear the cold start. Also watch the lights on the dash to make sure they're all present.
Also leave the car idling for as long as possible, like during the whole transaction, to check for overheating. Also kinda funny that you said listen for noises while using a soft top jeep as an example 😜
