- In a 1999 New Yorker article, the late Anthony Bourdain wrote, "In almost every restaurant worth patronizing, sauces are enriched with mellowing, emulsifying butter." And not just a little butter, either. Bourdain clarified, "In a good restaurant, what this all adds up to is that you could be putting away almost a stick of butter with every meal." There's no question that butter is a cornerstone of cuisine around the world, and that some of the best meals you've ever had most likely had butter as a key component. But that doesn't mean it's always easy to work with. Here are some huge mistakes everyone makes when cooking with butter.

Which of these issues have you encountered while cooking with butter?
I always use butter, because there is no margarine for error.
😏
Never burn butter again... Use ghee!
oops I missed your comment when I made mine. Great minds.......
If using salted butter, omit the salt, in the recipe, right?
Use unsalted butter and you'll have a tastier recipe. Salt is added to old cream to hide the rancidity. If you don't buy salted you won't accidentally use salted. Do a taste test with salted and unsalted butter. I can smell which is which.
yummy!
Margarine should be banned. If you want to fry things in butter you can use clarified butter! AKA ghee.
I love listening to Mashed videos. However this narrator's voice is particularly grating and very condescending at times. Did not make for an enjoyable 10 mins.
