I've never smelt Smelt, because I've never caught one. However, I have caught grayling and can definitely say " they smelled more of cucumber when alive". Great entertaining video Jack.
I don't know about thyme, but I've caught enough grayling to know they smell of cucumber. It's amazingly distinct. Brown trout also have a unique smell. I caught 1,000's of them over 65 years of fly fishing. Don't know how to describe their smell other than that of 'trout'. Crucian carp are also distinct but I haven't caught any since a teenager, 55 years ago, so I can't remember exactly what the distinction was. Perhaps you should do a series of videos on the different smell of each freshwater species. I wonder if, rather like the sense as developed in dogs and radar in bats, if otters can smell fish in cloudy water?
Caught hundreds of them years ago on Breydon Water in eel nets and en masse I can assure you they do smell like cucumber and it takes weeks to get rid of the smell !!
Sat here on the river Severn watching you sniff one whilst I have one on the hook 😂. The only bait to deliver a fish I may add 👍😂
I've never come across a Smelt that smells like cucumber. There is a Thyme like smell to a freshly filleted Grayling.

It's a tradition to ice fish smelt in Finland and can say that the whole house smells like it for a week after
