I personally feel like not talking about AV1 encoding is criminal. It allows you to record at lower bitrates and retain the same quality as higher ones, and take up less space. This is def something you should look into.
you should teach other ppl to use mp4 because if your output video starts stuttering the file would probably be the reason mp4 in my opinion is much better than mkv
I'd recommend starting with experimenting with different bitrates to find a balance between quality and size. Then do regular cleanup / transfers to external drives if you want to keep the footage you don't use.

Do you lock your game fps to 60 when you're recording? Playing games at 60fps is terrible but if I let it run free then the obs recording is choppy regardless of settings. Nobody ever mentions this in tutorial videos but the only way my recordings are smooth is when I match the fps (game & recording).

My encoder settings dont have the same preset options, tuning, or the checkboxes below profile, I think it could be the fact im using an AMD card but in case theres a different setting to enable those i thought id ask.

Nice video. But (sorry) may I suggest not zooming into your face while talking about the options? I think it would probably be a better learning experience if the viewer could see the options in full the entire time with maybe a red box or arrow (CURSOR EVEN) around the option you are talking about at the time. Yes, we hear what you are saying but zooming in takes away from the objective of the video which is familiarize yourself with the program and the options. Just constructive criticism. Good video otherwise.
Little side note.. I don't know if you encounterer the same problem.. But for everyones own edification, if recording.. and you click the "Stop Recording" button.. If you have a low end computer.. Make sure you wait for the OBS to, "Stopping Recording" .. If you dont wait.. like say you close program, or hit stop button a second time... While "Stopping Recording" is still present... Say bye to the entire video.... 😡 I did a recording of a video, that was about an hour long... All went to computer hell ... All because I hit stop a second time, under the impression that it would stop recording, or my video was ok, and saved... No 🥺😭☹️😡😡😡😡😡😡😡🤬 What a fuked up moment for me Such shyt...

Idk maybe u have the old Version🙁 in the Output recording settings when U scroll down there ja stuff Like psycho visual Tuning Missing. Is there maybe a setting that it Shows me that stuff? Hey! For the CQ Level I saw people say that the lower = better? How true is this and should I go for 20 or should I go for 16 for the best quality?
20 would be better quality than 16

your setup might be struggling, could try lowering the settings a bit and see if that helps
