I have a few suggestions to make this really tasty. First, skip the oil in the pan to reduce calories and start the bacon in the pan - as it renders the fat a bit, then add the ground beef/mince. This will also make the bacon crispier. An optional idea is to add some of the sweet chili sauce to the beef and just before you take the mince off the fire, add in the chopped spring onion for a slightly more mellow onion flavor that adds flavor to the beef. Next, rub the potato with a tiny amount of oil or butter and sprinkle with salt and you will have the best tasting potato skin.

Great idea, even though it’s a MONSTER of a feed the way it is I just may have to give your mushrooms a crack. Though not sure whether I’d place them as a topper at the end or fry them off with the mince…..? I'll just have to try them both ways. My partner is generally all over it now days. I must admit that is way to many, though they were all unintentional. I do find myself doing a load more retakes now days because of this very reason.
