    Q: Are you going to do more meatless recipes?
    A: I'd like to! I eat meatless way more often than my TH-cam channel would suggest. In the past, conspicuously meatless videos have gotten way fewer views, so if you want more meatless content, share this vid with your friends!
    Q: Do the French really say lé glug?
    A: No, that was a joke.
    Q: Are these tacos or burritos?
    A: I dunno, with something like this I kinda think that's a distinction without a difference. Get whatever size tortillas you want and fold them however you want. This is certainly not trying to be anyone's "authentic" recipe.
    Q: Are we going to see Lauren in more videos?
    A: I hope so! We have at least one more thing planned in the near-term.
    Q: Why did you pronounce "crema" that way?
    A: I've never heard an American not of Latin-American descent pronounce it any other way. I think if I said "CRAY-muh" or something like that I'd sound like even more of a pompous ass than I already do. I don't think you honor people by trying to fake their accents. People who watch my videos know I hold real Mexican cuisine in the highest possible esteem. It's easily one of the top 3 food cultures on earth, IMHO. This ain't real Mexican, and it's not trying to be - nor am I.

    I opened TH-cam last night specifically looking for veggie recipes and this was literally the first video in my recommendations. I made it today for dinner (at 3pm, because I’m 75 years old) and it’s delicious! And super simple! Thanks Lauren & Adam for helping me feed the vegetarian I share my life with!

    I really appreciate Lauren taking the helm on this video. The one thing that a lot of cooking channels fail to show is how normal people cook. I always try some seemingly simple recipe that ends up being WAY more complicated than it seems. This recipe is awesome because 1) it's easy for literally anyone, newbie or not and 2) it is something that I could reasonably whip up on a Tuesday without creating a huge pile of dishes.
    You did great Lauren! I hope to see more stuff from your perspective.

      I don’t think many people are actually “born chefs” maybe people are more in tune with what they like and what people like. I think cooking “skill” is really just knowledge and making it once already, everyone is a “normal person.”

      For me it's just to ensure that I don't get something I react to. Couple of decades ago I was sick all the time. Tummy issues. When I did an elimination diet. ( You eliminate most food allergies food from your diet) I found that alot of convenience items caused issues. With from scratch no surprise stomach issues. It's funny I saw that packet and had a waive of yuck. Not because it's bad but because my experience with foods like that caused all kinds of discomfort. If I need cornstarch I use it. If I need cumin I use that. No uncomfortable surprise.

    Just made these tonight; they're fantastic. Thank you so much for posting realistic, easy, fast, healthy and delicious recipes online! It's especially nice to have the video to elaborate on the recipe's instructions. As someone newer to home cooking, it's so much easier to develop skills when there's a visual element and plenty of description about everything. I especially liked the "knife skills" discussion; few other TH-cam cooking channels are so geared to the home and so many showcase ridiculously-fast cutting that would be dangerous to replicate without years of experience.

    Dear Mr Ragusea,
    Last night I made this for my family and they loved it! Myself being a vegetarian and them being meat loving omnivores I always try to get meatless recipes I think they'll like. After dinner I always ask them how the meal was and for meatless dishes it typically goes along the lines of "it was good/okay but I really missed the meat." Last night no such words were uttered. I try to make my dinners frugal, meatless, + yummy and this is that plus more. Thank you and lauren for sharing your recipes and I hope you do more meatless options in the future. Happy 2020

    Just made this tonight!
    I added a pack of stew meat and cooked it like steak with some salt, pepper, and garlic powder in a little bit of olive oil, then I threw in the vegetables with some water to deglaze in the fond. And I used a little more corn too, and a bit more taco seasoning to coat the extra stuff.
    Turned out great... Made a LOT of taco filling.

    I made this and went from a complete cold start "oh, should I do that recipe now?" to food on the table in less than 30 minutes. I expected that it would be good but I did NOT expect it to be THIS good. This is going into the permanent rotation immediately.

    Lauren actually has a big part of knife skills figured out from how she cuts the vegetables. A little tip for anyone who hates chopping: most of the knife skills you need is in the grip of the knife! Use your thumb and pointer finger to hold the actual blade while the rest grip the handle. It gives you much better control and makes you exert less pressure on the knife to cut stuff.
    After you get your grip down pat its all up to muscle memory. Practice slowly and safely, the speed will come later.

    Made the recipe last night, and it was fantastic. One revision. I buy my taco seasoning bulk and a heaping tablespoon wasn't enough. Going by weight it was closer to 4 tablespoons. Eventually I was just tossing it in and mixing, taste, repeat.
    Absolutely delicious and dead simple

    I love the recipe videos but I love it when his wife does the cooking…it’s refreshing in a way. Im a professional chef and I find it refreshing because it shows she tries which is half the battle, whereas others don’t even try. Keep it up!!!

    I love this recipe because it's so versatile. I can make about the same thing several times per week and not get sick of it. Whatever vegetables are on sale or in season. Black beans, pinto beans, chickpeas, green peas are all great variations instead of lentils.

    So i cooked this again recently and used a combination of red and green lentils, cooked them both in the same pot for 12-13 minutes. Red lentils became really soft at that length of cooking and i think it solves the potential problem with the recipe's ingredients not "binding". The soft, slightly mashed red lentils act as a "glue" for everything else. Also yummy.

    Yayy! Thank you for a vegetarian/vegan recipe I’ve been hoping you would come out with one. I eat lentils all the time and I’m always looking for new ways to use them.

    I tried this recipe, and it was a success and I will make it again.
    I used red lentils which apparently cook faster than green ones, so my lentils cooked to be a bit mushy. Still totally delicious, even for an omnivore like me. I also added some coriander leaf to them.

    Thank you, this is the first vegan recipe I can say I loved. I changed the topping as I'm not a fan of vegan sour cream so I topped with avocado, some thins slices of purple onion, some cherry tomato halves, cilantro & a squeeze of lime. It's like being topped with pico de gallo without the fine chopping.

      Do they like taco seasoning? I hope so, I've got someone in my household who apparently refuses to eat any herbs or spices because they might be "spicy"... Enjoy your frozen cauliflower...

    I made this tonight, left out the corn, garnished it with chopped tomatoes and cilantro, and served it on creamy polenta. Really great food on a chilly day!

    I just made this today for brunch. I scrambled an egg into it for a little extra protein and make breakfast tostadas. It is SO GOOD. And extremely satisfying. PLEASE make this!!!

    Definitely going to give this recipe a try.
    I will however use my own Taco seasoning, because packaged seasoning contains wheat and my wife has Celiacs Disease. So that substitution and some corn tortillas, she'll be set.

      He talked about why he doesn't want to do this in his Q&A video. Basically because the way he likes to eat burgers doesn't work as well at home I believe. He sorta said what's the point cooking a worse burger on a weeknight when if that's what he's in the mood for he might as well go buy burgers from a place he likes.

      Can you imagine Binging with Ragusea on your local cable food channel? I can't. Giada De Laurentiis on the other hand, with her perky tats and huge head; she could be layering fried cardboard into a pinesol-lasagna and the advertisers would literally be cumming in their pants. Network TV isn't something to aspire to, it's something to be afraid of; run like hell! It's like: can you imagine if "One Direction" wasn't owned by Simon Caldwell? They might actually be happy and wealthy!

    Made this for dinner tonight and it was delicious! Used a whole jalapeño, because I didn't have the chilies (very spicy!!) and used lemon + greek yogurt instead of the lime crema.

    I've eaten this recipe two ways - first time was with store-bought salsa and flour tortillas steamed in a microwave (no crema as I have not made that yet). Pretty tasty dinner, easy to make, nothing amazing. Second time was with stone-ground corn tortillas heated up in a pan with a good amount of oil, topped with fresh lime juice and avocado that I had chopped up and seasoned with salt and pepper. That time it did taste amazing. Btw you can leave the corn out and it doesn't really throw off the recipe.

    The way i make my "crema" is by mixing sour cream with milk and a pinvh or two of salt until i like the consistency and taste. And yes I'm Latin American.
