    Kocsonya is just aspic. If you go to a good fish shop with live carp, they can kill and clean. The kocsonya comes from the bones. Also you need to cut the “bitter bone” behind the head. Salmon? American toeyvah. Paprika and Pepper good.
    This is so Jewish Polish with the sugar.
    The carp can be cut into steaks and the kocsonya is beautiful
    Also, for us, kocsonya, we usually used to describe the calves feet, and it’s gelatin, or a version that you can make from chicken gizzards . Lots of garlic. Great with challah. Perfect for shabbos lunch.
    Find a szatmarer who can make you real kocsonya.
    Salmon? Chas v’shalom. (If you don’t like the taste of fish, you can make a mock the filter, fish with chicken, chicken breast, known as false fish in Yiddish, falcs hàl in Jewish Hungarian).

      I can also only imagine the reaction of the chevrei yeshivas Pressburg (pozsonyi yesive ) to this kocsonya, and the little chabadnik tail comment, sei gezunt.
