It's not honey but, oligo syrup. It's much lighter in sweetness. You want kimchi to be a mix of sweet, spicy and savory. I personally even add plum syrup, freshly blended apple or pear as well. Makes for a well balanced and enjoyable kimchi.
I found recently that kimchi is all different in Korea, whether mild- spicy, it's all different depending on how the grandmother's & mothers prep & make it. Hope that helps.
