Yes fallen leaves are absolute gold! That harvest will be complete bananas with fat juicy onions and garlic. Great job Pete!
Every fall I go to Starbucks and get the spent coffee grounds from them, then mix the leaves with the spent coffee grounds. When spring comes, it's the best compost for onion, garlic, and a lot of other veggies.
Starbucks keep all the spent coffee grounds in the green recycle bins in their dumpster area which usually is behind their store. You can take all the spent coffee grounds you want. I've been making compost like that for years and years up here in Oregon, don't know about Texas.
(1 part spent coffee grounds + 3 parts of leaves = > This works best based on my experience)
Another good reason to mulch it keeps the ground cooler for the worms and fungi. Prevents soil erosion and ground compaction from gullie washers. I use wood much and grass clippings but whatever works Good video.

What a great beautiful garden !!! What are your thoughts about pine shavings such as shavings for horse stalls ? Would that be a good mulch
