Watermelon Coconut Barfi/jelly/pudding
Note - 1½ inch x 1½“ Barfi. Uses a 7”x7” square tray 2” depth
Ingredients :
Watermelon Juice (तरबूज़ का रस) - 6 cups
Ginger 1” piece (अदरक) - 1 no
Water (पानी) - a dash
Sugar (चीनी) - 130gm ½ cup + 1 tbsp
Mint Leaves (पुदीना) - few sprigs
Cornstarch (कॉर्नस्टार्च) - 50 gms /5 tbsp
Water (पानी) - 5 tbsp
Rose Water (गुलाब जल) - 1 tsp
Vanilla Essence (वैनिला) - few drops (optional)
Food Colour Red (लाल फ़ूड कलर) - 2 drops
Lemon (नींबू) - 1 no
Desiccated Coconut (सूखा नारियल बुरादा) - ½ cup
