I canned chili that had hamburger in it but none had a vegetable soup recipe! They said processing for meat would make all the vegetables mushy. Especially the potatoes! 1 woman suggested to put the potatoes in boiling water for a few minutes to get the starch out. Whatever that means. I'm still clueless. Thank you so much Tess! Does this follow USDA guidelines? I thought that for soup, the jars should only be filled half with solid and the rest of the way with liquid. Am I interpreting something incorrectly?
I recently made this recipe in the beginning of September, and I also froze the leftover. After about 6 weeks I opened the jar and the frozen leftovers to do a comparison, and found that the canned hamburger soup was bland 😢 What happened ??? It had lost all of the seasonings. It was tasteless. Please help
How does the cabbage do in the soup? I thought we couldn’t can cabbage. Normally I love cabbage in my homemade soup but usually leave it out if I’m canning it. I always have some blanched frozen cabbage that I can add when I open the jar. However if the cabbage canned in this soup is satisfactory then I will do it.
It looks like she added home made broth which the way I make broth I don’t add salt. She wrote salt to taste. There is probably some sodium in the better than bouillon but that would be your choice. I’d make it without some of the carbs but this recipe has little sodium.

So the soup isn't actually cooked, the veggies are raw, just stirred into the hot broth to heat them they cook while canning?
Everything will cook together while canning.
