How To Make Puff Pastry | Puff Pastry Recipe | Eggless Recipe | Homemade Puff Pastry Sheet | Upasana

  • Learn How to Make Puff Pastry recipe, from our Chef Upasana Shukla in Basics of Baking only on Rajshri Food. Make this Eggless Recipe of Homemade Puff Pastry and share your experience with us in the comments section below.
    HAPPY BAKING!!!
    Ingredients:-
    225 gms. All purpose flour (Maida)
    1 tsp. Salt
    100 ml. Chilled water
    160 gms. Unsalted Butter
    Method:-
    1. In a bowl, add flour, salt, water and knead a dough.
    2. Keep aside for 15 minutes covered with a damp towel.
    3. Sprinkle flour on the counter and knead for 30 seconds.
    4. Roll with a rolling pin in rectangular shape as shown in the video.
    5. Brush off the flour from the surface of the flattened dough.
    6. Apply butter on the ⅔rds of the dough leaving a gap of half an inch on both the sides.
    7. Fold the pastry as shown and brush off the excess flour.
    8. Wrap with a cling wrap and refrigerate for 1 hour
    9. After an hour, repeat steps 4 to 6 and refrigerated for 35-40 minutes.
    10. After the butter has frozen up, repeat the steps 4 to 6 one more time and refrigerate for 30 minutes.
    11. After that flatten the dough again in rectangular shape and fold again without applying butter and refrigerate for 30 minutes. Repeat this step again two more times.

      This is one of the simple versions of puff pastry. The orginal folds a square of butter with a square of dough about 6 or seven time with about a hour in between.

    I learned how to make puff pastry with this recipe since real (or just good) puff pastry is hard to find here in Australia. I used it for a while with great results for Palmiers, and Chaussons Aux Pommes, however I use a little less butter since 160g is a but much for 3 turns and use closer to 140g. I started making 2 batches at a time, but once I moved to a third it becomes easier to use the normal Beurrage/Detrempe method in one larger batch then separate into sheets. Thank you.

      You gain fat from eating carbs and fats in combination since it creates AGEs and carbs trigger insulin, which is fat storing hormone. You lose weight, if you eat high fat, low carb foods

    sweet lady very nice way to teach. I wanted to ask when for the first time you put the dough in the fridge do you leave spread able butter on the counter or it should be kept in the fridge as well because when it is summer it will melt quickly

    I m happy buying the frozen sheets or filo puffs, they taste the same.
    I make sausage rolls, chicken and mushroom pies and even the spinach and ricotta is delicious!!
    Baking them hot and having with a cup of tea is the best thing ever..;))

    I tried this recepie today, when I rolled out the dough for second time, the butter was coming out , managed to roll out and had put it in freezer to make it firm, still was a struggle for the third roll.. can u suggest a fix
