I'm not sure about the plants (I'm hoping someone answers this still), but the little tubes added in the waterfall bowls appear to be a type of aquarium filtration medium. I've seen similar in aquarium supply stores, before. EDIT: Okay, it seems like it might be banana leaf, yes. And according to other similar videos, I think this is to neutralize the acidic PH in the concrete?
If you have the budget, I highly suggest making your filters/splash guards from something black. Aquarium filters themselves can be bought in large squares and will inhibit algae and bacterial growth. White is the last thing you want in a pond, aquarium or rain barrel.
