The German prisoner is saying things such as "Please please!" "Help me!" "God in Heaven!" and "It's coming!" He is also saying "It will not die!" "No! No! Let it!" "I am not a soldier! That's everything!" "I don't know" "I'm in Hell" and something along the lines of "I'm going home in spring" or something like that.
My german is intermediate, but some is a little off. My understanding is "I do not want to die!", "I am only a solider, that is all!", "I can hear it", "Leave it!" (referring to the cage door I think), "Close it again!", yearns for "Home... Spring....", and "a devil for the French devil"

I lived in Germany for a few years, and admittedly a lot of my German understanding comes from the band rammstein, but I’m very proud of myself that I can still understand it.

My guess is after Henri fed Lambert the "strange tasting spring water," Lambert slowly ends up transforming into the thing. I don't think Hollow has put it together yet xD

Just an FYI the monster can enter that safe room if you are a doofus and leave the door wide open. Even just leaving it unlocked will allow it to enter
