I know this was 2 yrs ago and by now all of Sideserfs true loyal supporters and fans know that the green butter cream is her signature BUT it breaks my heart when I see her do a cake and there's no green butter cream!
See this is why I wonder if you can do the super hard, super detailed stuff like oyster shells and now knitted texture without your molding putty or other shortcuts.

I know you live in Texas, so I want to believe our weather is pretty similar, and that what you do would work best for me, so: 1) What’s your ratio of chocolate to cream with white chocolate ganache, and what’s your preferred chocolate to use for it (super good quality, or callets?) 2) Since you work almost exclusively with modeling chocolate, do you always work with your a/c full blast?
