You have the most amazing job. It would be wonderful to travel and see how others make bread and sourdough.

Don't know if anyone is managing this channel or sees this questions, but would you consider the last bread seen in this video be able to considered a proper sourdough bread? I am asking this due to the yeast being added to the process. Please do not consider this a criticism, I am honestly curious about this.

Actually as a Turkish and someone who tasted that bread, that bread gives industrial vibe to me. But I don't think this would not make it lose its title as sourdough because they in fact use sourdough but to make the process faster, they use a little bit yeast. So you are right but since that bread is the most affordable and reachable sourdough bread in Turkey, they make really large quantities and I think at some point have to use the yeast.

Good question. In countries with legislation regarding sourdough bread, the use of a small amount of added baker's yeast (0.3%) is allowed. And sorry for not answering sooner. I'm more active on my Instagram account.
