In case anyone here lives in S. Florida and want to try Thai marinated raw crab, there's a place called Sen in Boca Raton that sells it. I had it for the first time about a month ago. It's fantastic.

I really hope this isn’t an ignorant question, but how can you tell when & if it’s safe to eat since it’s raw? Like bacteria & stuff, is it a certain type of crab you get that’s safe. I know it sounds dumb but in my culture we’ve been taught you’re never supposed to eat anything raw, so stuff like this is so interesting & new to me.

Usually, you can trust your senses, sight- does it look moldy or not like pictures of fermented crab // smell- If it stinks in a bad way it is probably bad .. however this is subjective to what you’re used to, I.e. durian stinks to some but smells good to others, but in this case, if it smells rotten, it could’ve been improperly prepared
Also, if the crab was properly fermented, it isn’t raw. Sort of like ceviche, it is another way of preparing/“cooking” the ingredient to add more favor and give it a different texture than the original form

here in the Philippines we ferment the crab on rock salt for few hours then ready to eat with kalamansi and fish sauce and lotss of rice

ChimChim Kook it is quite similar, but in Thailand, we normally marinated the crabs in fish sauce instead.
