I do love smoking spatchcocked chickens. Have used the griddle another time or two, trying to learn to use my cold spots etc but it's fun to cook on and clean up is a breeze on the Pit Boss.

"Help yourself to what ever you can find". I scored 5 very nice jalapeno peppers and now I know what I will use them for. Tip from uncle Rich, coffee filters are cheap and lint free and work great for soaking up bacon grease. And, to Amy, don't be shy. You sure weren't when it came to taking a bite. 😄

Nice video but I have a suggestion so you don't have to wait as long you can always put a dome cover over it to trap the Heat and it will get the melting time down
I don't know if you have ever cooked picanha steaks, but HFS I just grilled my first. I cut them about 1.5" thick, removed the silver skin, cooked them medium(doneness)over charcoal. Everglades original seasoning, salt and coarse ground black pepper. They were to most tender steaks I have ever cooked in my entire life. I actually like the picanha more than the ribeye. And it's way, way cheaper. Even if you don't do it for the channel, you must try it. Check out Guga to see how to cut it.
I have done it...on a charcoal grill..its in my video playlist Weber Summit Charcoal Grill. I agree its really good...Only problem we have is no one carries it...EVER...like pulling teeth.

its a smoker tube...i have seen for ever and in one of the swag boxes we get from Pit Boss it was in there...i gave it a try and would highly recommend....Its just a way to add pellets and burn continuously with the smoker....just light and forget...maybe add another flavor as well..
Honestly I do not know the correct answer without BS. I would think not...I think beef fat burns at a higher temp than pork. Maybe beef tallow...or dry as can be griddle and allow the beef to cook in its own fat

@@TheFlatTopKing I know my local mom and pop bbq store offers a free second controller when purchasing the navigator pit boss. I know me personally I have two danson owned products I have a vertical smoker from pit boss and the black label Louisiana grill. I tend to use the black label for my main dish since I can control the temp of my pit from my phone. I also use a tp20 so I can read the true temp of the pit as well. It’s nice because some times on the non pid controllers on a long brisket cook the temp will be like 70 degrees off but still be reading 225 on the display. It’s nice to be able to just adjust the pit from my phone instead of having to go outside and dial in a new temperature to adjust for the non pid pit boss I own. The black label is a pid based controller so even on long cooks the temperature is always with in 15 degrees. Pit boss does offer a upgraded controller for the navigator on there website. You should reach out and see if they would hock you up since you used a ton of there products on your videos. I would run a few cooks on both and see what one you like in the long run my guess will be the upgraded one.
I will say this seeing you pull out the heath riles garlic jalapeño rub made me gain mad respect for you. I have been smoking meats and other foods for about 12 years and that is one of my favorite base rubs. I am fan of dirty bird on my chicken and cow cover for my steaks. Heath riles also makes a garlic butter rub that’s absolutely amazing on smash burgers I tend to do like a mixture of the butter and jalapeño in a separate shaker to use for my burgers. Now if you do some garlic, jalapeño and cherry rub on some ribs that flavor profile is amazing with the honey butter brown sugar foil wrap after 3 hours best ribs you will have.
