Aside from how cucumbers look like snakes as some people have pointed out, I think the cats' inability to detect the cucumber is also a factor for their fear.
To understand why these cats get scared of them:
Imagine something like a mannequin was placed right behind you and you didn't know you would be scared right? Well its the same for cats they get spooked because they didn't know it was there or how it got there
Not only this but they see them as snakes initially, not only just any object, any object shaped like a snake.
They see them as snakes and cats are naturally terrified of snakes
They visualize them as snakes, as well

@@IntelTV My cat's immediate reaction to anything even SLIGHTLY shaped like a snake is to try and kill it. Like, ever since he was a kitten. If you drop a marker around this cat, it will be grabbed and kicked. :P
