One of my all-time favorite treats in Thai cuisine are Chicken Satay. Featuring a thick sauce that has a thrilling combination of accessible Thai ingredients kissed with peanut butter, chicken satay is as much a hit at home as it is on a Thai menu. While wonderful for dinner, I also love serving them as Hors d'Oeuvres for gatherings. Making them in the Instant Pot takes this iconic dish to the most convenient, one-pot level. As RuPaul may say after trying one, we're about to Satay Away!

You almost certainly know this, but perhaps others don't - to remove the white tendons (or whatever they are) easily, grasp the tendon only (not the meat) in a paper towel with your non-dominant hand. Place a small, sharp knife at a 45 degree angle where the tendon and the meat come together, then - keeping the knife still - gently pull the tendon toward you. Again, the knife doesn't move - you're pulling the tendon only. This completes the task in under 10 seconds. Thanks for yet another great recipe, Jeff! P.S. What do you think is a tendon, is a huge artery running through the chicken. It is, inedible.
Before you try to measure the peanut butter, spray the cup with Pam spray. It will release everything that's in the cup.

@@PressureLuckis the fish sauce necessary? Or am I cheapening the satay recipe if it’s not used?
I think I would modify your finishing technique: skewer them, then dip them completely in the sauce before plating.
That works too! But brushing gives you more control over how saucy you want them.
I would put the excess sauce over noodles and make something like a sesame noodle salad. Add some of the leftover chicken and oh my!

Can you just use powdered curry?
Give it a shot but it won’t be the same. Start with 1 teaspoon and add more to taste after pressure cooking when adding the peanut butter.

Thread the "tendon" through the tines of a fork and pull out the "tendon"
Great suggestion I do not like tenderloins because of that thing lol…I will try the fork
I’d brown that chicken faster and darker so as to create more crispy and not overcook.

The tendons don't bother me. After everything is cooked, they are soft and I don't notice they are there.
The sticking and dipping would be easier but unless you had enough chicken you would “pollute “ the rest.
