Switching to Visualize from Keyshot.
I use Creo and NX, in addition to SolidWorks.
With Keyshot, to assign different materials to an imported STEP file, you simply change the color assignment in Creo or NX before exporting.
Do you have to have separate parts in your exported STEP for Visualize to assign different materials?

I think yes. Because visualize applies material property to the whole part.

Yes, as long as the models you are using are 3D
