Gardening is such a great learning experience for your children! They can easily grow lettuce, kale, chard, green onions. Also, most herbs are very easy. Lemongrass should be hardy there. Rosemary and thyme are very easy.
That salad looks wonderful. It's so nice that the kids recognize some of the herbs, and that you can use them in your own food. Yes. It would be fun to grow a little herb garden. I'd love to find those ready made falafel, if not fried. Have to loik them up. So nice to see all your great kids giggling and playing together.
I have only recently got into gardening and what I find most exciting is researching and planting native plants local to my area. It really supports the ecosystem and native bee and butterfly species, and the awesome bonus is the native plants really thrive with a very hands off approach. You're not fighting with them, just giving them a space to do their thing.

Dig up mint and put it in a planter with no holes then bury the planter into the herb bed it will stop it spreading everywhere (where the term like wild mint comes from as its uncontrollable and a messy)

Mint can take over gardens but doesn’t course problems , it’s easy to thin out . I’ve been growing mint in my gardens for years without any problems. It makes a refreshing drink , just fill a jug with water add a few leaves of mint & a couple slices of lemon. 😋
An easy and funny gardening subgroup is succulents, you can grow them, reproduce them, play with repotting and rearranging them, learn how to "make babies" out of them, great hobbies for parents and children to do together!
Use the mint! Harvest and dry it and you have tea for the winter. There are great Apps to find out which plants you are dealing with. And dont Limit yourself to herbs! Theres so much out there to plant and grow. 🍅, cucumber, eggplants, beans, strawberries, grapes... its so much fun and doesnt require a lot of work!

I would consider pulling out the mint (make sure you grab the roots too otherwise it'll grow back from where you pulled it). Put half of it in its own pot (roots go in the soil) and the rest use for whatever you need/what to
The tall flowering one is rocket and the bark green one you pointed to is spinach. Leafy greens are great to grow. They are pretty hardy. I find the biggest challenge is watering every day in the summer.
In NZ a lot of schools belong to a movement called Garden to Table the kids grow veges in the school garden then cook food produced i taught cooking and the kids loved it. At the end of the session everyone sits down at a properly laid table and eat together then do the dishes. lt is very rewarding seeing kids developing from yuk to enjoying a vast range of foods. My 9 year old has a large vege garden she is an enthusiastic gardener and cook and usually cooks dinner twice a week. It is a great skill to learn my favourite is growing berries.

All the herbs can be cut back and dried! I think the veg you thought was cabbage growing may have actually been spinach 😄 The parsleys were curled parsley and Italian parsley which is sometimes called flat parsley.

Did you know that you can do syrup with all that mint ? Just pour 1 L of boiling water over about 100/120 g of mint leaves, let it rest for a night, throw away the mint and add about 800g of sugar in the "minty" water and boil your syrup for 10 to 15 minutes. It makes delicious drinks ! I use about a spoon of that syrup in a 200 mL glass.

Mint is amazing as an iced tea. Boil water with the mint leaves in it. Strain, add sweetener and ice, yummy yummy.

You could make fresh mint tea. I really love fresh mint tea, sometimes with a bit of honey. Maybe the kids would like it too

Definitely pull out as much of the mint as you can. You won’t ever get rid of it. Maybe blend it into a nice lemon or limeade.

Yes! You can also puree the mint instead of throwing it out, mix with lemon syrup and you get what the arab world calls: limon nana.
