For the same reason a plane in the sky looks slow despite going >550MPH, whereas a car going only 70MPH *_flies_* by like a blur. It's called "motion parallax". The further away something is, the wider field of view it has to travel across, so even if it's moving *incredibly* fast, it doesn't LOOK like it is. 😊

Since it's really hot, once it gets higher in the sky and the air temperature gets cool enough, it creates that vapor tail. That's why you don't see one near the ground, as it's too warm.
