    I've always told my friends that there is a big difference between having a quality steak with a side of broccoli vs. a fast food cheeseburger with high sugar bread dripping with sauce. It's not the red meat, it's what you eat along side it

      ​@polibm6510 no it's not. Studies all push in the direction that you're healthier and live longer with the addition of fresh fruits and vegetables. And any downsides of meat seem to mitigated by simply adding those fresh fruits and vegetables.

    I Eat 2-3 lbs of beef a day, 6 eggs for breakfast, carnivore diet for 6 months never felt better in my life.

    Love this interview. Taught me how to talk to educated people. I am 68, I've become a carnivore. For 90 days now. Red Meat/ Lamb /Salt / Water / Electrolyte. I do adaptive resistance training using "Body By Science". This all done to produce a metabolism to, restore brain function, bone density, reduce blood pressure. I haven't used alcohol in a decade. Results are just amazing. Weightloss, clarity, went from XXL to L in clothes. I appreciate this interview because I want to be able to understand the changes. I socialize with executives in pharm and they are skeptical, predicting long term effects. But the reality is doctors and the medical industry are not experts in nutrition. You need to advocate for yourself. And understand "food is medication". I would be a great candidate to reach out to, as someone who has gone off grid from pharma/medical solutions.

    There is so many holes in this discussion. First it always bites me when a researcher speakers of the Mediterranean diet. There is zero consensus of what is allowed & what is forbidden in Mediterranean diet. It’s like saying there is weather outside. Really what hell did they eat.? Dr. Ginge

      An infinite amount of anything is bad. Zero of a lot of things is bad. The challenge is finding the healthy range.
      Your heart beating is good. If your resting heart rate was 180 bpm you might have a problem.

    Just watched the end. The glee both show about GPL1 drugs is strange? Eat the crap and take a pill? Profit on both ends. I would also like to know a little about his medical history. He keeps touting bariatric surgery and now the GPL1 drugs. Did he use either? He looks like I did 30 years ago with metabolic syndrome.

      Those drugs stop you from eating as much. That’s how they reduce your weight so they are hurting the profit of food companies.
      The glee is because for the first time ever the huge number of people who don’t have the willpower, hunger levels, etc. to control their weight now have the option to live a much longer and more enjoyable life by taking a pill. It’s one of the most amazing advancements in medicine ever.

    I’m confused, he talks about how people’s cholesterol is now much lower than a few decades ago…..but people are sicker now?
    He says we shouldn’t do what his mum did and collect the lard from the meat she cooked, but those generations did not have the chronic illnesses we do now?
    40% of US population is now prediabetic. Shouldn’t we try learn from the past to see what was actually working?

      Is the only thing that changed in that time the cholesterol levels? How do you know it’s not some other factor like the factors described in the video?
      We used to smoke more and now we smoke less. Should I pick up smoking because back when people smoked more people were healthier? No of course not because we can control for certain factors when doing these studies.

    Saturated fat? Track your ldl, hdl and triglycerides and ApoB.
    Get a CAC and CIMT test. These data points will tell you, very accurately, about your cardiovascular health.
    Why guess?!?

    Salt always gets thrown out there as one of the boogeymen, though I’ve yet to hear any convincing arguments for limiting salt intake in healthy active individuals.

      Point is most people are not active and healthy. Sodium is one of those things where you need enough for your activity and how much you're excreting through sweat, etc. Similar to carbohydrates should be adjusted based on what you're burning

      @bigpicturegains the experts do. Social media i fluencers typically don't discuss nuance. The government also makes public policy recommendations which are all blanket statements since that's how public policy works. Unfortunately, health and medical statements are not well suited for making blanket statements. There are guiding principles that should ultimate be used to make tailored decisions for the individual 🙏

    I am so confused - one expert says corn oil etc reduces cholesterol and others say those oils are terrible for health - polar opposite advice! Also some say that high cholesterol isn't even the cause of heart disease? ! What is the freaking truth?!

      People tend to go to extremes. It is important to have cholesterol within the range. To avoid taking medicine I tried different ways and tested my blood often, At last I settled on eating all plant food, without sugary stuff. Looks like in the scheme of things, choice of oil is secondary, so long as I don't drench my food with oil.

    To old school! much of this seems 30 yrs behind current understanding.
    Wife and I run high LDL all the time but lipid sub fraction screening showed no small dense ldl.
    Trygliceride low, blood glucose low, fasting insulin rock bottom.
    So, LDL droping since 60's....seed oil replacing sat fat ....if seed oil has plant sterols that are recognized by the body as cholesterol, then the body might not feel the need to produce so much of its own....lowering ldl test result. Does ldl test measure plant sterols, NO.

      Neither does she. If you subtract all the cosmetic attempts, her real age would be much more visible. More proof that high protein intake ages you. She might be strong, but she could have achieved the same with less than 2/3 of her protein intake, while minimising the accrual of the aging effects from the rest of the excess.

    I've heard of Dr Lyon a couple time but only recently listened and subscribed to her. It's awesome she got her PhD at Washington University because that's one of the schools I've been looking at to get my biomedical engineering degree.

    The Problem Isn’t Omega-6s Themselves, But Excessive Intake
    Omega-6 fatty acids are not inherently bad; they are essential fats that the body needs. The problem lies in their overabundance in modern diets, often from processed foods and seed oils like soybean, corn, and safflower oil. This leads to skewed omega-6 to omega-3 ratios, which historically were around 1:1 but now are often as high as 20:1 or more. Such an imbalance can promote chronic inflammation, which is linked to various diseases, including heart disease, obesity, diabetes, and autoimmune disorders. Dr. Maki doesn't speak to this.
    Failure to Address the Root Cause of Imbalance
    By emphasizing the benefits of omega-6s without acknowledging the potential harm of excessive intake, experts like Dr. Maki may appear to sidestep the central issue: our omega-3 intake is too low, and omega-6 intake is excessively high. This imbalance may negate some of the benefits of omega-6s and worsen inflammation-related conditions.
    Lack of Holistic Nutritional Perspective
    Speaking only about the benefits of omega-6s can feel like a narrow focus. A more comprehensive approach would advocate for reducing the intake of omega-6-heavy seed oils while increasing omega-3-rich foods like fatty fish, pasture-raised eggs, and high-quality supplements to restore balance.

    I doubt saturated fats is the problem. I think it is mostly the industrial chemicals, pesticides, pollutants that are stored into the fats too that are the issue. Eat grass fed products without the antibiotics as much as possible too. Reduce ultra-processed foods & oils, sugars, alcohol & smoking too.

      Well, the studies and people's actual blood work show that saturated fat is a problem by raising LDL and Apo b particles. There is a genetic component so some people respond a lot even to small increases while other people are not as sensitive. So some people can have more than others. Also, if you're maintaining a healthy bodyweight that is a big factor too.

      Want to say that I mean no offense, and please let me know what you have learned about this, this is just a thought of mine based on conversation I have with a few local farmers in my area that work small scale in order to have free range beef and goats. I have a feeling the "grass fed" and "organic" foods are a scam. No livestock is only fed fresh grass in the pasture, it would not sustain them alone. All livestock, even free range pastured graized is supplemented with hay and small amounts of grain. Maybe far less and they are not confined in giant buildings like mainstream livestock. Also "organic" isn't pesticide free or antibiotic free, there is a list of "approved" pesticides and antibiotics that are allowed to still be considered organic. does anyone actually know what livestock farming of any kind truly entails? This is all just a selling point that allows big business to charge more. Yes it is great that the animals are not confined and sick, but none of the claims and certifications are actually what most of us think. I just started learning about this in depth last year by having friends and family in this industry. Yes I would much rather buy local because I know the health of the livestock is good but the main reason is the price. My neighbor barters with me from time to time for goat meat and the farm down the road will sell whole butchered cows at a much better price per pound than I could ever dream of in the store. Please let me know your experience in your local area

      @Primitivemycology hay counts as grass. All cattle are grass fed....but most are *grain finished* because it's easier to fatten them up that way grass finished means they were only fed hay/grass the entire time

    I wish, rather than state, unreservedly, that saturated fat and and salt is bad for health there would be some proof offered. It seems this is always assumed as true and everyone knows the science. For example, is saturated fat or salt bad in the context of highly processed food, but has been shown to be equally bad in a diet devoid of processed food? Is all saturated fat and salt the same? Or, is it just expeditious, or of known little difference they are considered equal regardless of context?

      Depends on you metabolic state. He seemed to take a carb burner as default. In that case he is on the right track. However if you are on a very low carb diet your metabolic state switches to fat burning. No issues with high saturated fat and salt. Especially on the carnivore diet.

    While this guest seems like a well-researched scientist, unfortunately, his biases are glaring. He is focused on lowering LDL cholesterol and promoting seed oils, but the evidence supporting this approach is shaky at best. The idea that reducing saturated fat to lower LDL and assuming that lower LDL leads to better health outcomes is not strongly supported by the data.
    When we look at LDL, it’s important to recognize that it’s just one marker and doesn’t provide the full picture of cardiovascular risk. Factors like HDL, triglycerides, inflammation, and insulin resistance are equally
    if not more important. Studies show that in the absence of high inflammation or metabolic dysfunction, elevated LDL does not necessarily increase risk and can even be protective in certain populations, particularly older adults. Focusing solely on LDL while ignoring these broader factors oversimplifies a complex issue.
    Additionally, his reliance on organizations like the American Heart Association to validate the use of seed oils is troubling, given their history and ties to the food industry. Seed oils are highly refined, profitable products, heavily marketed as “heart-healthy,” yet increasing evidence links them to inflammation, oxidative stress, and poor metabolic health. Their widespread introduction in the 1960s coincided with declines in hormonal health, including testosterone, and increases in chronic diseases. This context cannot be ignored.
    I came from a similar bias believing saturated fat was harmful and seed oils were beneficial but changing my approach and including more saturated fats has completely transformed my health. Saturated fats play essential roles in hormone production, cellular integrity, and overall metabolic function. The guest’s refusal to consider the broader evidence or challenge his own biases is disappointing, especially given the complex nature of cholesterol and cardiovascular health.

    I found myself transitioning to higher fat. Not as much rib eye and more 73/27 ground beef. More consistent fat. Needed more fat for my stage 4. Ground beef is cheaper and ga ve me even better results. 18 months in now

      industrial oils have never existed and are 100% artificial and highly oxidized, while animal fats have always been eaten by humans (for 2.5 millions of years)

      Animal fats and meat have been studied for millions of years by our ancestors and we have evolved to adapt to them, as all animals have adapted to whatever they ate. Seed oils are just more recent highy processed junk food.

    Anyone see the odd contradiction of the talk...at about ~35min mark, he said people had higher ldl in the 1970/60's averaging about 160 ldl-C (and healthier). Now, it has gone down to about 100/110 on average...However, the rest of the talk is moreless on how to lower ldl-C. People in the 60/70's were healthier, less fat, less t2d, less cardiovascular events...anyone caught this factoid nugget?

He researcher start talking about the Hill criteria and causation but failed to give information that cholesterol is in fact the cause of heart disease. LDL is poorly correlated to coronary heart disease. This gentleman lives in the echo chamber that cholesterol is bad. Please stop and explain the cholesterol paradox. Dr. Ginge

    Dr. Maki talked about funding for nutrition studies. I think it was Dr. Don Layman on a podcast here or somewhere else that was talking about protein study. Because it was not related to disease prevention or the study of a disease, the National Institute of Health in the United States would not fund the study or any study unless it was related to disease. That's why many studies are funded by food organizations.

    How much red meat and saturated fat can one safely eat to avoid heart CVD? Simply track your lab work - hs-CRP, APOB, LDL/HDL, trigs, BP, CIMT, CAC. The values needed to reduce CVD risk are lower than the "normal" ranges listed on lab results.

    Exactly what I thought. Thank you very much Dr. Lyon for interviewing scientist. First of all I like to hear who is paying for this researches. Second of all, I like to hear what is the exact meal plan not just to mention specific amounts of meats red or white doesn’t matter. Then what exactly is the meal because when the science started to talk about cholesterol if it’s my doctor he’s fire right there. That’s the biggest scam ever. And especially when they say soy protein “insulated”, it’s good for you because lowering the cholesterol. It’s not just the cholesterol thing. It’s so many other issues with the soy, but nobody mentioned it. They just mention cholesterol because is the biggest money maker of the ignorance people believes. I love it, please Dr Lyon bring more of them. Let’s prove they do research for their sponsors not for humanity. And for those who are going to ask me for cholesterol levels, I just want to say one thing, 9 years ago my doctor telling me that I am not going to die from the cancer but for sure from cholesterol because I was eating 20 eggs per day. And before retirement he just tell me I don’t know what are you doing and I don’t care but don’t stop doing it. That’s good enough for me and I don’t care what is the science says.

    34:11 later in this video his dietary recommendations contradict what he is currently suggesting here. At this time marker he says we don’t need to be concerned about dietary cholesterol, but later on he recommends cutting out dietary cholesterol as a preventative measure. This is why epidemiologist are confusing nutritional advice

    I never been taking cholesterol pills , with a diet full of vegetables and fruit with lesser consumption of meat. With him saying that carbohydrates replaced with meat, will lower bad cholesterol,I disagree. I’m 75 years old without taking cholesterol pills & have a normal blood pressure without medications. I’m staying active as well.

    The master question. What are the natural LDL levels if we eat like we eat for hundreds of thousand years?
    I think this values should be the scale of what’s normal or not.
    To remember we started only about 7000 years ago not to eat like this. In global average our diet was 1/3 animals from the water, 1/3 animals from Land and 1/3 from plants. Everything came unprocessed from nature. And the plants that we eat today have not existed in that time.

    I really don't like the idea of labeling saturated fat as a poison. That really sends a bad message when it comes to people eating red meat and cutting out vegetable oils. I also get irritated when he says older people need more protein, yet labels saturated fat as a poison. You cannot have it both ways.

On the other hand, if you are a 180-200 pound male, and you consume on average one gram of protein per pound of ideal body weight, then you're consuming quite a bit more protein per day than 120 grams, and potentially quite a bit more fat. But lets stick with a single pound of lean ground beef. Depending on how lean it is, you can be expected to pay upwards of 8-10 dollars per pound, so I would say an 80/20 mix is feasible for most people. You're looking at nearly 35 grams of saturated fat in that one pound of ground beef. On the other hand of you can afford the lean beef at 90/10, you're looking at about 18 grams. Meanwhile, the American Heart Association recommends eating no more than 13 grams of saturated fat per day. So your lean ground beef, even at it's leanest, doesn't measure up to the established AHA standards. Ergo, eating more animal protein generally means consuming more saturated fat.

The problem of people nowadays is they don't do enough physical works like our ancestors. if we had enough physical work and sit less we probably will get rid of the extra fat or the extra glucose more quickly.

    Even the analytical studies are descriptive. For example, Group A has a lower (here, lower is an adjective) rate of type 2 diabetes when compared to group B. It doesn't mean that doing what defined Group A will lower (here, lower is a verb) your risk of developing type 2 diabetes.

    I am always mindful of those that speak on health matters with specialist knowledge, and they don't mirror physically what they speak .

    I lowered my LDL by 50% by replacing saturated fats with carbs. It was sky high and my girl could hear my heart whistle a meter away.
    My liver values and blood sugar such as HbA1C also improved dramatically.

      I know he is contradicting him-self as he is not sure himself. The answer is No to Statins as it is the poison. Vitamin D3 along with K2 in mega-doses, therefore No need for you to get yourself tested for Vitamin D3. Magnesium Chelate in high dosed is fine too. You keep on drinking raw organic milk whether goats 🐐 or cows, or even a donkey will do you No harm. Avoid vaccines including for your own love 💕 family 🙏💖 as well. Detox is fine. No need for fluoride. No need for any antibiotics as well. 😊😊

      Meat and dairy are also heavily subsidized. People just single out sugar and grain because they have a pro meat agenda.
      Fact of the matter is that meat, fruits, and vegetables all have unique health benefits.
      Also true that over consuming calories will lead to health problems regardless of the source of those calories (the source of calories will just shift which health problems you get)

    You gotta be more specific. Are you talking about LDL-p or LDL-c cholesterol? The best indicator of cardiovascular risk is the ratio of LDL to HDL. If it's high, it means your LDL-p is high, which isn't good.

    What about the Minnesota Coronary Experiment and the Sydney Diet Heart Study ?
    Both used clinical outcomes and the Minnesota one was a RTC that ethically could not be done now.
    And both were never published until recently found because they showed no clinical benefit (actually a suggestion increased risk of CVD and all cause mortality) of eliminating Saturated fat with PUFA.

    The majority of fat in red meat is unsaturated fats; most of it mono saturated. Same fat as in olive oil. This is basic knowledge. This anti saturated fat people often recommend us to eat salmon, because of its “healthy “ fats. But salmon have about the same amount of saturated fat as red meat.
