For anyone out there whose Internet Explorer was working but the recent Windows update messed things up (trying to open I.E. automatically opens Edge without the dreaded "message") I was able to go into Start button > Settings > Control Panel, and then I somehow found a page which allowed me to uninstall the latest update. This took nearly an hour. But now my I.E. works again.
I need I.E. for a couple of websites which don't work properly through Edge, even with their so-called Compatibility mode.

@@skrypnichuk -- Well the example above is only for those who have experienced I.E. not opening at all, AFTER the 10/12/23 Windows update. Also, I have Windows 10.
I opened the Start menu, and clicked on Settings (gear icon). Then I typed Control Panel into the search bar. Then I clicked on Programs and then View Installed Updates. The 10/12/23 update is the one. Right-click on it and click Uninstall.
The process took a LONG time, btw, almost an hour. I still get Edge yelling at me that "Internet Explorer has been discontinued" but I merely right-click > close this message, and I.E. works fine afterwards. 💻
