A German Food Classic! How To Make Delicious German Potato Salad | German Food Made Easy

  • Where would the Germans be without their potatoes? German potato salad is in season all year round - it’s a staple at every party and in summer at every barbecue - there’s even a potato salad at Christmas. However, there is a difference of opinion about the ingredients - in the south of Germany, potato salad with broth is preferred, but in the north: mayonnaise. But Max Merrill’s grandmother has another trick for a particularly tasty salad variation - gherkin water. Find out in the video why it’s the perfect way to prepare a potato salad.
    Potato salad recipe:
    Ingredients
    800g waxy potatoes / 800g festkochende Kartoffeln
    3 gherkins + gherkin water / 3 Gewürzgurken + Gurkenwasser
    1 apple / 1 Apfel
    1 white onion / 1 weiße Zwiebel
    175g mayonnaise / 175g Mayonnaise
    1 teaspoon mustard / 1 TL Senf
    Chive / Schnittlauch
    Parsely / Petersilie
    Method
    Cook unpeeled potatoes until a knife easily slides through through. Then rinse with cold water, peel, then slice into bite sized chunks. Let them rest in gherkin water, along with the thinly sliced apple and the chopped gherkins for around 10 minutes. The gherkin water will prevent the potato from becoming too mushy and soaking up the mayonnaise. It also adds a subtle flavour, as well as taking some of the sweetness from the apple and preventing it from browning. Pour off the gherkin water and keep it in order to adjust the consistency of the potato salad later. Add the chopped onion, chopped chive, mustard, and mayonnaise and mix thoroughly. Add salt and pepper to taste and garnish with parsley. The longer the potato salad rests, the better it will taste so allow it to rest for at least half an hour. The remaining gherkin water can be used to thin out the mayonnaise if desired.

      When I was younger I couldn't get over the strong flavor of the German mustard; but I may like it now since I've gotten older.

      In the German speaking part of Belgium we use a mix of mayonaise and creme fraiche instead of just mayonaise

    Man, this definitely reminds me of my childhood. My little german grandmother, Johanna, would make the most amazing Kartoffelklöße and serve with pot roast. She passed many years ago but it remains my favorite dish to this day. Oh, and she added pickle juice to her potato salad too! As a child, I would “sneak” sips of it and she would giggle/pretend she didn’t see me. Lovely memories....thanks for sharing!!

    I suspect the Kartoffelsalat I decided was decent enough to eat was one made by a schwäbische Frau for a special dinner at my local Catholic parish in north Florida back in the 1970s. I never liked the usual American potato salad even though I had grown up around ig, and it may have been the hard-boiled egg that was part of the turnoff for me. But Frau Zahner made a Kartoffelsalat that was absolutely fabulous, with the bacon, bacon grease and vinegar. (And it had no hard-boiled egg.) That was when I'd decided I like German potato salad. (Vielleicht war es entweder süddeutsche oder schwäbische Kartoffelsalat was mir gefallen ist.) This salad from the presenter seems a bit weird, definitely different; more Berliner Art?

    How do you grow chives? From seeds? Or you bought it in pot planted already???

      In Germany, you can buy chives in any supermarket, either already cut and packaged, or in a pot as a plant - if you are patient enough, you can also sow it of course! 🌞💧

      Thanks! there is a huge selection of German mustard varieties - A simple "medium hot mustard" (mittelscharf) should be fine!

    Laddu Ingredients Ghee ie clarified butter; Besan flour; a pinch of salt; water, sugar 1:2; food colouring; cardamom powder; cashewnuts, raisins, edible camphor, water
    Method
    Mix besan ie gram flour in water and salt to a consistency like curds or a little more thin
    Heat ghee in a wok, use the ladle to scoop the batter into boondi spoon fry soft till cooked
    Side by side prepare syrup of one thread consistency, add edible food orange colour, add the boondhi
    Then add fried cashew and raisins and cardamom powder and edible camphor powder
    Prepare balls and serve on Christmas Eve
    South Indian Sweet

      @Juztn Last Max uses "Gewürzgurken" for his Potato Salad - they are usually sweet, just like Bread-and-butter pickles. But feel free to use whatever you like, some people even use chunks of fresh cucumber.

    A shame. You got the basic dressing but chose an inferior spud.
    Kipflers are best. They peel easily & hold their texture.
    Adding apple's a bit like pizza w' pineapple.
    Anyway, yours is easily the best on YT....( if that means anything ).

      @@DWFood Hope you will also release a video about a classic south-west german potato salad in the future. Oh and please don't put bacon in it. Vinegar, oil and maybe a bit salt should be enough. Some supermarkets sell potato salads that also contain mustard, onions and herbs which is OK I guess but yeah, the art is it to create a simple salad that refreshes and tastes well after or together with a dish.

    Made this a few days ago. Very different from the Czech version my grandma made with no mayo. The apples are an acquired taste but I love the pickle juice flavor.

    Alemania es muy bonito. Muy estricto para la licencia de manejo. Muy duro para los extranjeros obtenerla. Pero eso está bien. Manejar auto no es un juguete. Pero lo feo es el clima de Alemania. HORRIBLE. De los 12 meses 8 son fríos y de Mier... Gélido humedo y nieve y los otros si hay suerte extremos de calor hasta 34 grados. En en extremos. Nada que presumir ahí.

    Greeting from germany bw the south. In my opinion don.t need Mayonnaise. Its salad neben meat. And meat has enouth fat in it. Potato salat with Mayonnaise from our north will be served with fish, with less fat. I hope u understand this. ❤

    Great recipe. Here in India we are a micro minority community called as the Zorastrian ,we fled iran around 1700 years ago after the islamic invasion of the Persian Empire we regarding food we have melange of Persian and Indian cuisine especially food that is eaten on the western coast of India. Hence we eat Dhansak at all times it's a dish made with goat meat ,dal (lentils) and vegetables all cooked well with our indian masalas accompanied with golden fried onion rice , fried meat ball kebabs and onion cucumber lime relish . It's eaten year round .

    My recipe is from the Czechoslovakian or more correctly Slovakian side of my family. We always add gherkin, that's very important. We use Hellman's mayonnaise with a little milk in it and the magic twist is to leave it all overnight. The next day it's fantastic! So we always make it on Christmas Eve Eve. We like the potatoes soft. I generally find it too crunchy unless it's the family recipe. I had it in Berlin a couple weeks ago and it's slightly too crunchy for my Czech taste. The gherkins are there for the crunch, not the potatoes. That's my Czechoslovakian family way.
    We also have a very special family twist added by my uncle, which is to serve the kartoffelsalat and schnitzel with exceptionally thinly sliced cucumbers in vinegar. This is the perfect refresher for the heaviness of the Schnitzel and kartoffelsalat.

    quick potato slices, press the potatoes through with an egg cutter, always the same thickness and many slices at once

    You almost got it right but according to my Oma you forgot the Dill !!! And i'm pretty sure your Oma as Berlinerin would have slapped you 'cause you overcooked the potatoes by a minute at least :-))
    My Granny came from Potsdam and pre cute the potatoes before cooking and i love the Word "abschrecken" !! Haven't heardit in 40 years 🙂....you get a like !Hildegard sounds cute - My grans were Helga and Guenther :-)

    Dude, you have to add the info that this is northern Germany's potato salad.
    In the South it's nothing like that.
    It's skin boiled potatoes, still warm peeled and cut, salt, pepper, a red wine vinegar, an oil that doesn't add too much taste like sunflower oil, warm beef broth and diced onions.

    good you pointed out that Mayo vs. vinegar is controversial, but as far as i know, its not "just a little" :D well but same goes with beer. Its a german sport to mock products from other bundesländer, sometimes even from the neighbor village.

      @Laurie H Sherrod Max used Sweet Gherkins, but you can use all kinds of pickled cucumbers, such as Brined Pickles or Kosher Dill Pickles. Just try what you like best! 🥒🥒🥒

    There seems to be a divide on youtube between your version and the one I grew up with. It is usually served warm but have had it cold at picnics. Made with bacon, red onion, vinegar. No mayo, pickle or apple.
    Is the one I grew up with not German potato salad?

    Oh the Kartoffelklöße...yesterday, I steamed off 3 potatoes and left them out overnight just to make that dish. There will be some roast chicken, a bitter leafed (Arugala and Dandelion) Kopfsalat with fresh squeezed lemon juice, olive oil and a bit of sea salt. Now what to do with those Raspberries I have?

    I'm German because my Father was born and raised in Germany until he came to the USA. 🇺🇸 I have had the hot & cold homemade German potato salad with the vinegar and bacon. 🥓
    Although I have never tried the way you just made it with the pickles, apples, mayo, and German mustard. It really looks great, and I'm definitely going to make it and add it to my potato salad recipe 😋 list.

    My mom makes potato salad similar to this one, my dad makes the Bavarian version with cucumbers radieschen (tiny red radishes) and gravy instead of gherkins and mayonnaise
