I live overseas, in Australia .. there is a major shoe event happening next month, at these major sneaker conventions, would you say most of this Jordan 1s are legit?

I've been to several conventions, including Sneaker Con. And I would say that there are people there that buy, sell, and trade authentic sneakers. But, there are also people there that sell or trade fakes (knowingly and unknowingly).
So, my suggestion is to know what you're looking for before handing over any money. Also, depending on the event, sometimes there are people there that do legit checks.

Absolutely! The GS sizes are different, so certain things I pointed out in the video only apply to adult sizes. I will eventually implement smaller sizes into my content.
