Actually the Director Ramesh Sippy didn't want Amitabh die in end. Actually the orginal shoot was a happy ending but in the last moment they changed it. But it really proved a better ending. People are in tears when Amitabh dies. Such was the impact in those days. Great Film. Sholay.

Sholay would never have endured as long as it has if Jai had survived. Jai's sacrifice and the reveal of the trick coin is very very significant, moving and emotional. It makes you finally totally hate Gabbar and makes you want vengeance on behalf of Jai.
Consider at the end of the movie Mela, the spiritual recreation of Sholay, both brothers survive and the end is all feel good and lovey dovey. Yeah that movie didn't do as well did it. No real stakes for the audience to get invested it.
Tragedy is very important in story telling and shying away from telling emotionally moving stories is how we get these lacklustre, heartless failure of movies that pervade so much of cinema today.
You have to be willing to love the characters you create to show the audience their worth and you have to be willing to then kill the characters you love if you want the audience to feel the impact of the story and leave a lasting impression.

You do realize that sholay was based off of Hollywood classic westerns? Even the song mehboobs was a remake.
When this movie was released my parents were not even married. I saw this movie for the first time when I was just 6, that's in 1990. Even after 33 years, I get goosebumps watching the action scenes. What a masterpiece. Unbelievable acting by Amjad Khan. No need to mention AMITABH & DHARMENDRA, It's beyond words. SHOLAY, BR CHOPRA MAHABHARAT, and RAMANAND SAGAR RAMAYAN were made forever. SALUTE TO SIPPY SIR.🙏

Consider that since the coin was always a trick coin, this means that Jai chose to go to prison with Veeru in order to save Thakur in train. He chose to go to Ramgadh to find Gabbar and he chose to die so that Veeru would live, leaving nothing up to chance. In the end every good decision they made seemingly out of chance was just Jai being a decent human being instead of just two criminals just allowing fate to decide their actions for them.

This brings back so many memories. I was a teenager living in Dakar, Senegal in the 80s and 90s. My brothers, my sisters and all of our friends just adored watching hindi movies which we saw in their original version with french subtitles. We eventually knew all the actors Dharmendra, Amitabh Bachchan, Amjad Khan, Hema Malini, Shashi Kapoor, Sanjeev Kumar, Jeetendra, Mithun Chakraborty, Prem Chopra, Randhi Kapoor, Rekha, Nipura Roy, Shaturghan Sinha, Rishi Kapoor, Reena Roy, Raj kapoor, Shammi Kapoor, Radhir Kapoor, Rajesh khanna, Vinod Khanna, Rajesh Roshan ... We watched so many movies, we actually came to know a lot of hindu words, and we eventually could sing along with the masters Muhammad Rafi Sahab, Lata Mangeshkar, Kishore Kumar, Asha Bhosle .... And we'd argue until very late in the night about which was the best movie, who was the best actor, the best singer,. And we had no worries and so little trepidation about the future. Good times!
Movies and music are definitely India's best export. Long live Peace & Harmony between goodhearted people of the Earth !
