    I like what you did to the catfish and also your cooking and the way you pass your message across, awesome.
    A quick one, what is the maximum length of time between the first grilling (when you apply your rub)/and the second one where you put in the sauce etc and wrap it the foil? I mean how long can one leave the fish between the first and second grilling?

    Hi there - great video! Would it be possible to do this on an indoor grill or oven? If so, would you still add the sauce after cooking the fish, 🐠 or would you use it to season the fish before cooking it? Thanks Chef and pls keep up your informative videos!

      Hello Nana,.. Yes you can use indoor grill to get you fish grilled. You will get the same result just that the charcoal flavour will be missing. You can work around the missing charcoal flavour by using a "smoking gun" to get the same flavour like outdoor charcoal grill.( Do some research--It's on Amazon or ebay)
      2) With regards to the sauce, rub or marinade before or after on your fish, I will suggest you use "rub" first before adding any "sauce". The rub sets up a base for your sauce to seat on. Using a sauce from start works well depending on what kind of fish texture and thickness you are cooking and the kind of result that you want. If you like it moisturising and wet, use sauce. If you want it a bit dry, seasoned and with a bit moist, use my method. Marinade is in when you leave in a Marinating substance over a period of time. Marinade can be anything you create or buy for that purpose.
      3)The are 3 kinds of heat on the Charcoal BBQ grill, 1) Radiant heat,- This fire directly and quickly cooks the surface of the food from the source, 2)Conductive heat- This fire directly and quickly cooks the surface of the food by heating the grates rod from the source hereby leaving a mark on it 3) Convection heat - This kind of heat bounces around the oven or charcoal grill when it's closed hereby cooking it more evenly., so to answer you question, yes the oven can cook it evenly just like when the charcoal grill is covered to cook it evenly.... I hope I have not talked to much and manage to confuse us.. Let's keep it like that

    Wow that looks amazing. I'm surprised you didn't deseed any of the bell peppers before blending them for your sauce. Do the seeds add to the taste of the sauce? I've always taken them out and now wondering whether not to bother in the future 😊

      I'm not certain if an attempt at a response a year later is helpful 😅.....but the seeds of peppers are usually the spicier or "hotter" part of the pepper, so in my opinion, it's more of a personal preference mainly.
      The other side though is, some people try to avoid many seeds in their systems (talk about possible appendicitis from accumulation of seeds).
      I like to keep my seeds though, especially if they're organic (from our garden)
