    Got me a big joe last year to replace the Green Mountain pellet grill I had. I have done lots of long cooks. Not set it and forget like the pellet, but I find it holds temps great with minor adjustments throughout the cook. Rained like hell yesterday (typical Colorado Memorial Day weekend...) and loved the fact that I didn't have to worry about an electric cord to smoke some baby backs.

      I have both the Kamado Joe and 2 gmg pelleters. I have uses for the different animals. Ribs rock on the sloroller the Joetissorie chickens are bomb. Chicken pieces on the pellets. Also pizzas are great. Keep stone around 500 degrees to prevent bottom burn.

    • @davidbalentine2110
      @davidbalentine2110 3 ปีที่แล้ว

      Yes. Truth is there is no perfect world. You get taste, you give up convenience; you get convenience, you give up some taste. Remember, this can be applied to most everything. And yes, the Trager can be trounced by a charcoal/wood fired smoker - if you know what you’re doing.

    Very timely. I’m just getting ready to pull the trigger on a Kamado Joe. Glad to see on a channel about doing man shit you finally stepped up from little boy pellets to manly charcoal! 😉. Can’t wait to see your experiments with this. I was trying to decide between the classic and the Big Joe III. I had settled on the Big Joe because it seemed more versatile. Interested to see if you think the larger size would be better of if the Classic does everything you need. Keep it up man!

  • @garciatony
    @garciatony 3 ปีที่แล้ว +4

    Kamado style cookers, like the Big green egg and the kamado joe, beat out pellet grills because of the versatility. One, you can achieve higher temps. Two, if you like cooking steaks (which I would assume it’s everyone watching this video) you can actually sear your steaks.

    I have a generic brand kamado (don't even know what brand, I got it cheap on the used market practically brand new and there are no markings whatsoever) but it's thick ceramic and it's killer. Best upgrade was a smobot, it controls the top vent and you get wifi. The blower type temp controllers end up blowing ash back up into your cook from what I've read. Another upgrade was removing the dinky castors, welding on stainless castor mount reinforcements to the basket base, and drilling & tapping for a larger bolt size where they bolt on and going with 100mm castors, now she rolls true and smooth, and won't tip or collapse. I lifted mine out on my own, but after that experience I wasn't lifting back in on my own lol. One last thing, I rigged up a cyclone drum attachment to my vacuum cleaner so clearing out the ash is a breeze with no filter clogging.

    Having both is the move. The pellet for an “outdoor oven” essentially, and the Kamado for more serious BBQing. If forced to pick, pellet > kamado just for ease of use (even if it’s not as “good” technically).

You can do it in the egg shaped ones but has to be monitored a lot instead of a pellet smoker does. Still love it and will use it as a grill or for quick smokes (like steaks)

      @@JeremySiers The JoeTisserie is another great add-on in addition to your DoJoe! I used to run the Traeger as well, but this does everything better IMO. Love the content. Keep it coming!

    the ash tray is to keep the ashes from damaging the frame, if you clean it constantly you shouldn’t have any problems, but if you don’t with time it might crack, talking from experience.

    Love my Kamado Joe. I was a huge Weber fan, and still love em but my kamado has replaced my Weber’s. I use it a few times a week but have not done pizza on it yet.
