Maybe Polk saw Airball take a sip of drink (as he did at 9m26s) and he thought just that? Airball maybe knew of the Tell and was shrewd and reversed it? Anyway, it was a great bluff!! The hearts on board frightened Kings.
That taking a drink was odd... it felt contrived, like he was trying to portray weakness and needs a drink to hide his nerves or whatever, but actually has a real hand, the nuts even. So kinda reversing it as you said.. I think Doug's instinct was spot on, just couldn't pull the trigger.
