      I agree, Just wondering what the best method to "water down" the finished whiskey to the desired proof is? Dump the water in or do it slowly over a period of time?

    As a native Texan who lives not far (relative to Texas) from Austin, I love getting to see the distillery start from the ground up. I can’t wait to be able to buy a bottle of your whiskey and know all of the work, time and energy that went into it.

    I'm reading Tasting Whiskey by Lew Bryson and I had just read the chapter describing the whiskey making process before watching this video. This video really helped me understand more fully what I had read. I really admire Daniel's passion and, for lack of a better word, nerdiness for the scientific side of whiskey. I also love Rex in all his ball busting glory! Since stumbling across these channels I have purchased both a glencairn glass and a few new whiskeys and started attempting to develop some semblance of sommelier skills. I also have joined the tribe and become a MB. So thank you for all your videos, I enjoy them and appreciate the knowledge in all of them. I hope someday to own one of the beautiful bottles of whiskey that is born in your guys distillery. Till the next episode, here's to fighting, stealing, and drinking!

      Yep basicly the process of deciding what to put into bottles and what to add to the feints for the next go round.

    Some inaccuracies when you explained the "brewing" part. You don't boil the grains, you add hot water to mash the grain and extract the sugars. This sugary water is the wort. This is then boiled to sterilise it (and when hops are added in brewing) before cooling and adding yeast

      Except no hops for whisky. That's also why it's not called beer as beer is by definition an ale with hops used as conservative. Ales can have all kind of other things used as preservatives: juniper, pepper, cloves, cinnamon, etc.
      But in the case of whisky no preservatives whatsoever as it's distilled so quickly after beeing brewed that there's just no point.
      That being said, i'd love to taste a whisky where hops were used. Might be a nice experiment. And the those to gentlemen might be the only one that could make it happen as they are small scale and could do just a batch to test it.

    Great Flute. I wish I had more money.
    Couple points:
    Yeast don't die after fermentation, they go dormant and can be reused.
    The "Backset" (whats left over in the still after a run) can be used to sour the next fermentation. It's where the term "Sour Mash" came from. Also can be used to flavor the alcohol distilled by adding small amounts. Or be used in a dunder/muck pit for making rum.
    Anyone wanting to learn more: Watch "Still It" videos.
    Jessie has come a long way and is a straight shooter when it comes to distilling info

    whats also amazing about distilling is its been traced back to 2000 BC china (although it was very different) then went wild through the silk road to the west to roam then around 7th century was perfected in what we use today.

    11:36 Does Daniel mean the opposite? I don't have the experience or knowledge to argue, but I would think that a stronger proof would evaporate more (since alcohol evaporates faster than water).
    Not saying Daniel is wrong, but asking.

    i was researching whisky distilling as a possible line of work or my future and must say good choice going with a T-500 with an alembic hood it should come out pretty smexy for testing runs. Other than that tho i know (pardon my French) fuck all about equipment so ill leave you guys to what you do best ;) much love

    I am so interested in everything whiskey. I just wish I could enjoy it the way I see others enjoy it. My tongue seems to pick out the Bitterness in any alcohol, including wine and beer.     The history behind the barrel as far as I know is that British instead of building new barrels used wine barrels or Porto barrels but in States due to the new world new forest new barrel for whiskey, bourbon and rye. Where as Scottish and Irish malt whisky uses an old wine barrel which changes the taste and aroma.

    The fermented liquid is indeed beer, albeit very green beer. Wort is the resultant sugary liquid from the mash prior to fermenting. I'm clueless about the distilling process but I've brewed plenty of beer.

    Interesting stuff. One thing that surprised me was that lower alcohol percentage in the barrel increased evaporation. Alcohol being far more volatile than water I would have expected the opposite. I'm guessing it must have something to do with water being able to pass through the membranes in to wood but alcohol's larger molecules can't. If that's the case, your evaporative losses wouldn't be quite so bad as they would be primarily water and your end product, while less volume would be a higher proof.

    So.... technically at standard pressure when you evaporate alcohol you get a little water mixed in (h20 and etoh have an azotrope) also the more plates in the still the closer you can get to the azotrope (if I remember right that's around 75-85% or 150-175 proof)

    So I have a Brewzilla with both the alembic head as well as the T-500 reflux column. I also make beer. That's a hard combo to beat for about $1,000. If I needed to save some moolah, same combo, alembic pot still only. Glad to see y'all use 'em. Guess I'm not a total knucklehead after doing my own research.

    Thank you for this, this is awesome, Y'ALL ARE AWESOME. I do have two questions for you. how much does the type of yeast used in the process effect the flavor of the whisky? Second what is it about copper that makes it an essential part of the process as opposed to using another metal?

    Good video man! I'm looking to get started also. I have a $5000 still but haven't had much time to use it yet. I'm going to get it going right away though. Getting all the legal stuff all sorted out is for sure the hardest.

    I'd say that's a loose "interpretation" of how beer is made (can't speak for distillation, not my thing) :)

      as a beer brewer, It's actually exactly how beer is made :p to a certain point at least.
