In the past sometimes when I extruded a face it would create a bunch of extra vertices. I think my Maya was bugged but a simple fix was merging it after a face extrude and then dragging the 'Distance Threshold' to 0. That would remove all of those extra vertices, so It became habit to merge after I extruded 😆🤦♂ the new update fixed the problem though so you can ignore that lol
If it were for a videogame, then yes you're correct. There lots more you could cut back on as well - the whole glass piece with all the interior elements could just be a simple plane with a graphic and barely use any polys at all.

Cards / billboards would be used for the contents of the vending machine. Too many polygons for that element.
