    Putting a flashlight to an egg is actually called "Candeling" and it's how you determine the quality of an egg and look for blood spots before cracking. You can also check the rough age & freshness by the size of the air pocket at one end of the egg. The smaller the air pocket the fresher the egg, it will get bigger as it gets older in your fridge. Learned all this in FFA and going to State competitions twice for poultry judging.

    The reason you see leaking is the membrane inside that keeps the eggs from seeping through the porous shell has been scrambled :)

      In theory unbleached eggs should not leak, or leak less.

    • @notavailable9919
      @notavailable9919 2 ปีที่แล้ว +10

      @@bufordmaddogtannen You are thinking of washing. Eggs have a natural coating that fills the pores of the shell, this keeps things like bacteria from getting in. When eggs are washed it is removed. This is why washed eggs must be refrigerated. The inner membrane is different and works as an air and moisture seal but will not defend against bacteria.

    • @bufordmaddogtannen
      @bufordmaddogtannen 2 ปีที่แล้ว

      @@notavailable9919 my reasoning is that if the external coating is stripped away by the washing process, the contents of the egg can leak once the membrane is ruptured.
      This should not happen / should happen less with unwashed eggs.

    • @notavailable9919
      @notavailable9919 2 ปีที่แล้ว +4

      @@bufordmaddogtannen I get what you are saying. Regardless, unless you are getting eggs straight from the source, just about all eggs sold in a grocery store are washed. The reason for the leaking is still the rupturing/scrambling of the inner membrane.

    I was one of the original kickstarter backers for this (I dunno, I just like egg gadgets). I haven’t touched it in years. I don’t care about pre-scrambling an egg before cracking it, I’ll just whisk it in a bowl, but I wanted to make the golden eggs. The company recommends not peeling them at all but cutting the whole in-shell boiled egg in half lengthwise and then scooping the insides out with a wet spoon to try and make it look like a smooth egg half. Just not worth the hassle. 🤷🏻‍♀️

    Growing up a homemade toy was based on a similar idea. A length of cord is run through a good sized flat button. With the button in the middle, you twist the cord like you did the egg tool, then gently pull the ends of the cord so the button spins. You make that same pulsing of increased and decreased tension on the cord. It was actually fun, but we didn't have electronic toys back then. I think my grandparents introduced this toy to us. The hardest part was coming up with a good button. 😀

    A tip:
    I have chickens and those very fresh eggs do NOT like to peel. I tried different methods of cooking, different ways to peel, and finally settled on just boiling the eggs, then I use a knife and QUICKLY cut the entire egg in half (like a deviled egg, not like a poached egg.) Wet the knife and cut firmly. I take off the few bits of broken shell. Usually only one or two per egg, if any. Use a wet spoon and slide it between the egg and the shell. It pops out in just seconds.
    They aren’t always perfect, but the result is FAR better than peeling off chunks of the egg white, and the process is much faster and cleaner than peeling by hand. It also uses almost no water, which is a bonus if you currently use running water or a bowl of water to help peel the eggs.
    Happy New Year, people!

    Maybe you should have dug in to the closet o' junk and pulled out some of the egg peelers you had from the past?
    But for peeling, I just tap the egg many times on the top of my fridge and they peel pretty easy... if I have a "trouble" egg then I peel it under running water and that seems to help.
    Otherwise, for opening/closing the unit you might have tried different sized eggs too: looks like you were using all extra large eggs, maybe small or medium sized would have worked better?

      That method works because the shell peels away with the membrane. Unfortunately the scrambler destroys it and the egg inners are cooked to the shell.

    I continue to love your channel, James. This product seems ridiculous. If I want really good scrambled eggs I use an old-school 1950's style hand cranked egg beater😊 The reason the eggs do not peel easily is because the cell membrane that surrounded the albumen was destroyed in the spinning/mixing process. Keep up the fun work.👍

    Why would anyone want an egg scrambled and cooked in the shell? I can see scrambling it in the shell, then cracking it and cooking it in a pan. I’ll stick to a bowl with a whisk or a fork. Wow! Look at the money I just saved! Merry Christmas and Happy New Year, James!

  • @ignemuton5500

    i'm going to guess that the reason it's harder to peel them is because the yolk has a different coagulation temperature and different consistency, in addition it's also a lot stickier than the white, so by mixing them around you basically stick the shell to the egg even harder than it already is.

    Hey just wanted to let you and your watchers and listeners know I'm sure some people know this that if you peel your eggs underwater just a real slow slow that goes over the egg a lot of times if it gets in between the shell and the egg itself it'll make it easier to peel not a completely guaranteed thing but I have found that it can make it easier to peel and thank you so much for doing all of these tests and stuff I really appreciate it you've tested several things that I thought about buying and you helped me make up my mind too or not to thank you

    After you cook the egg, plunge it into ice water for a couple of minutes then tap the egg on a solid surface and roll it to crack the entire shell. It will be easy to peel then, but if you have a little trouble just peel it under running water. Works for me every time.

  • @smittycat359
    @smittycat359 2 ปีที่แล้ว

    Not that you want to suffer through using this thing again but I'm curious if this changes the peeling at all. Place a steamer basket into your pot filled with an 1" of water. Cover, bring water to boil and THEN place the spun eggs into the steaming pot. Replace lid and let the eggs steam over boiling water for 12 minutes for hard cooked eggs. The theory behind putting eggs into already steaming water is that the sudden introduction of heat allows the proteins to set faster and hopefully less time to cling to the inner membrane. Others have commented that they think the inner membrane has also been scrambled into the egg but even with non-spun eggs, they can be difficult to peel.

    I would like to add that in North America, and only in North America, eggs are put trough a chemical wash before reaching a store, this wash is to clean and sterilize the outer part of the egg, but removes an outer membrane leaving the inside in contact with the outside, hence the egg can ooze out some of the contents, and also why you have to refrigerate eggs in North America, since air and bacteria can find its way inside the egg without that membrane.

  • @themoviemaniac8416

    What a goofball idea. It takes away the best things about eggs: Deviled eggs, sunny side up or easy over, poached, making meringue and custard dishes, easy peeled hard boiled eggs with the smooth, silky white and tasty yolk separate. And as far as scrambling, that's better done after cracking the egg so you can add anything you like while whisking it. Maybe the real goofballs are the ones who buy this?

    Try using your air fryer. 250 degrees on wire rack for 15 to 17 minutes then into ice bath, they peel so easy. The yolk is a little different color/texture but still delicious. I think the golden eggs might still be hard to peel because the proteins in the yolk might stick to the shell but you never know till you try it lol.

      We have an Nuwave Brio 8 quart basket air fryer that works great for bulk foods that need tossing, and we picked up a 12 Qt Emeril Lagasse AirFryer Pro at Costco for an amazing $79 deal. The Emeril has trays not a basket and works better for most uses, it also has a rotisserie but it's hard to clean. I think we spent $140 for the Brio at Kohls and we rarely use it unless making wings or roasted veggies.

    In regards to the guts of the egg you found on the shell. I think that the insides of the egg have leached through the microscopic pores in the membrane and the shell when being spun around in that centrifuge contraption.

    I have chickens. Fresh eggs can be really difficult to peel. To combat this, I boil them for one minute, remove from heat for one minute, boil for another minute, remove from heat for another minute, simmer for 10 minutes. Remove and place in ice water. Peel immediately. It works really well. Maybe such a technique would help here.
