    My ex’s mother from Skåne used to give me bagfuls of these to freeze & eat later. They’re so much better than American cinnamon buns, so I went on a quest for an authentic recipe & have had this one bookmarked for years. I finally made it today & can safely say that is the perfect Kanelbullar recipe. Easy, authentic, delicious & gorgeously presented. Thanks so much for this, truly. I’ll be using this recipe & method for the rest of my life!

    Thank you for the recipe, will surprise my Swedish daughter in law when they come and visit us in New Zealand. Our son is kiwi born and loves her cooking and she loves his cooking taught by me. I am Dutch born married to a Welshman and live in New Zealand, crazy mixture eh!!

    I made this recipe last night and my family has been raving ever since and treating me like a queen. Thank you for teaching me so much! I have a kitchenaide stand mixer but followed the recipe to the T--I mixed and kneaded by hand and it wasn't as hard as I imagined it would be. The buns are just wonderful. I just need to get my hands on some pearl sugar to make them truly authentic.

    I'm very happy to hear him say the best kitchen aid is your hand connected to the brain. As a culinary student, I've never been one to enjoy all the fancy crap, though they move things along, I'll use them to get the job done, but I always do things from scratch and by hand. Makes a BIG difference in quality.

      I always enjoyed hand kneading dough too, Izocentric,. However, now that I am old, arthritis in my hands makes it difficult. So, I use a mixer with dough hook to do the heavy kneading, and finish by hand. Sometimes you have to adjust to what life gives you. :)

      Yes, I know I’ve been wanting one for such a long time but since I don’t have it-I use my hands instead. Troublesome sometimes but also kind of fun.

    I made these tonight, for tomorrows breakfast. I did a half batch. They came out light and moist. My father grew up with these. I remember when I was four, my farmor (my father's mother) made these. They taste just like hers!

      Swedes don't eat these for breakfast. They are for a cup of coffee in the afternoon - for "fika".

    I've tried this recipe 3 times and I've managed to make some changes in the list of ingredients (to make a smaller batch), whilst still following the same steps. It worked just fine. Here's what I used if anybody is interested :
    Dry ingredients :
    • 450g all-purpose flour
    • 70g sugar
    • 8g instant yeast
    • pinch of salt (only a pinch; I use salted butter)
    • pinch of kardemumma (opt.)
    • pinch of muskot (opt.)
    Wet ingredients :
    • 250 ml milk (2 %)
    • 75g salted butter
    • One large egg
    Miixing all of those together takes some time (more time than in the video, by hands), but you still end up with the same result.

    Swedish kanelbullar are much nicer than any others I've tasted. There was this little place in Stockholm, many years ago... spoiled me for cinnamon buns! I really can't go near any others now, though this recipe looks like it could be very similar to the one in the little bakery in Stockholm. And now I'm wandering down Memory Lane, thinking of my gang of friends, and how we couldn't pass by that little bakery without indulging in two-fisted, light and fluffy cinnamon buns. Warm. Just the right amount of cinnamon. And butter. Perfection! Thank you for sharing this recipe.

    Been using this recipe ever since I started making Kanelbullar... And this recipe is perfect, same taste as in Sverige, same soft moist dough, and a favorite in my family. Perfect for fika or just to treat a friend to something sweet.
    The only difference with the ones I make, its that Im really more generous with the cinnamon :D

    Really appreciated the music. Whole video was well done. Made this recipe yesterday, absolutely delicious. Though I have to say flour was too much, it could be the flour. So I started over and used less flour (half batch -started with just 2.5 cups) and added more until it was the right consistency. This recipe is not only delicious, but a lot easier than most cinnamon bun recipes, and I have quite a few.

    The dough is resting for the 1.5 hour now. I am so excited. I am using a small spoonful of cardamom in the dough though. Pearl sugar is not easily available to me so I will be substituting the pearl sugar for raw sugar. I tried a different recipe yesterday and it was a DISASTER. I could tell the dough wasnt forming right. The dough way dry and grainy and simultaneously sticky and breaking apart though no matter how much I kneaded. having never made these, I trusted the recipe. Unfortunately they were completely inedible and tasted like sand. I immediately began looking for where I went wrong. I found your tutorial and knew this was "the one" I needed to try. Upon making YOUR recipe, I can already tell these will be amazing and I am not even finished yet. My dough is beautiful and just how it should be. Thank you so much for taking the time to share this recipe and film the steps.

    Beautiful presentation and charming instructors. Attending an annual New Years eve celebration, each year having an ethnic theme. Swedish is this year's theme and to make it more challenging, the hostess shares that country's heritage. I am adding raisins, almond slivers and almond paste to the filling as well as cardamom to the dough. I have been researching these extensively and am going for the "whole package". I needed (very tempted to use kneaded) to see how they were rolled out and shaped. Thank you.
