      Egg salad needs mayo
      and mustard. For a tasty variance I like a little curry and toasted slivers of almonds. My bridge clubs favorite.

    This looks delicious, but I think I'd be inclined to try it with hard poached eggs rather than fried. That way I can get the pure "boiled egg and mayo" flavor of traditional egg salad without the hassle of peeling the shells.

    I will definitely try this way this week.
    In my egg salad I prefer scallions/green onions/ “échalottes” as we called them in Québec. I find that they are easier to digest - or fresh chives from the garden. Also like salt, pepper, paprika, some times celery salt or whatever inspires me from my spice cabinet. Maybe a dash of Dijon or some roasted peppers. So many possibilities... whatever I’m in the mood for on that day! Eggs are so versatile!

    This looks AMAZING! My favorite is Egg and Olive...just eggs, green salad olives with pimentos, mayo (Dukes, of course), and a little yellow mustard! If it's too thick, just loosen it with a tiny bit of the olive brine. Sooooooooo good!

    I can’t wait to make this. I love egg salad. I grew up with an egg and olive salad sandwich which contained jarred green olives containing pimentos. Not sure how this combination would be made warm. I’m thinking I am going to love your recipe.

    Mustard, Mayo and dill pickles makes the best! French’s or spicy brown mustard, your choice. S&P to taste.

      I use sliced sandwich pickles in mine and chop them up. I believe Bick's calls them "Yum Yum" pickles. It brings a touch of sweet and brine to the taste.

    When I make traditional egg salad I use a pastry dough cutter to mince the cooked eggs, I wonder if that would work for this preparation rather than the scissors.

    I love the deviled eggs that my hometown butcher made so I use some of the same ingredients in my egg salad: dijon mustard, thinly sliced green olives and paprika. I also add finely chopped onion. I made it the other day and a friend loved it.

    Back in the 60's my dad had a drugstore that had the old style sandwich/soda bar and our egg salad had chopped black olives. To this day it's still my favorite. Try it.

    My favorite egg salad is with Kefir cheese for that tart element and feta. I add raw garlic, lots of pepper and salt. I cook my eggs till the yolk is just barely all the way set....like 9 min. Then I use a potato masher to mash up the peeled eggs and add some Kefir cheese, feta, crushed garlic cloves, pepper and mash it all together. Sometimes though....I prefer to just make egg butter instead of egg salad. Egg butter is a Finnish thing. It's supposed to go on top of Keralian Pastries but I have coopted it as an easy egg salad substitute. It goes the same way as for the egg salad but instead of adding all that other stuff you add a small nob of butter and mash till you get a smooth paste. It helps if the eggs are slightly warm or the butter is room temperature. You can salt it but I usually don't. I don't know what it is but the combination of egg and a really good butter is sublime. There is just something about it.

      I work for a Finnish family and keralian pastries with Egg Butter are So delicious and so different from anything else. The egg butter is not something I would have ever come up with but I loved it

    I made it with a lot of ham cut very small and diced onions. The onions got dark brown but we're great . This was very quick and easy.. I am thinking of trying it with the tamagoyaki to see how it goes with flavored scrambled eggs. No relish for that one

    I will sometimes add pickles, dill. Other times I'll add peas, carrots, and corn (sometimes fresh, sometimes frozen). My favorite way is way mom makes it with celery, potatoes, and mustard.

    Mustard in addition to mayo for brightness. For this type of egg salad I could see adding chopped olives or mild pickles but I think buttery castelvetrano olives would be excellent in a warm egg salad. They cut the fattiness of the butter the eggs are cooked in and the added mayonnaise. Making this soon I think.

    Egg salad ingredients
    All Organic:
    Egg, pasture raised by a local small farmer
    Celery
    Locally made organic pickle relish, like for hot dogs
    Dill
    Parsley
    Avocado oil mayo
    Mustard
    Turmeric, just a bit
    Lettuce, tomato
    Sourdough bread, with some organic, grass fed pasture butter
    Personally, I like some capers, too, but not my family. So I add a few just for my sandwich.
    I don't add onions, but sometimes a little garlic powder. Onions just seems to turn it from salady to omeletty.

    Looks delicious! I’m a big fan of finely chopped cucumber and chives in my egg sandwich. Not a big fan of celery. Endless herb combinations. Also try half Mayo, half sour cream or yogurt.

    This could totally 💯 be veganized with JUST EGG and some vegan Mayo. Delicious!!! Warm, it’s more scrambled egg, but cold would be more like egg 🥚 salad. No reason why you couldn’t serve this cold with some nice Dijon, Mayo, cracked black pepper, chopped celery, chives, and some fleur de sel.

    That looks interesting, but if you want traditional egg salad, an Instant Pot will cook eggs (steamed rather than boiled) that peel perfectly every single time. It honestly takes a few seconds to peel one. I now (well, pre-covid) take deviled eggs to every function since there is zero danger of ending up with mangled eggs.

      Kristen suggests avocado (oooooh!) and also says you don't HAVE to add something if your yolks are runny. Creme fraiche would be delicious. You could also try some plain yogurt (labneh or Greek yogurt would be best - or strain regular yogurt through a coffee filter or cheesecloth). Or sour cream. Or tahini. Lots of options!     Egg salad for me, onion, celery, mustard and Mayo. I’m not convinced about eating warm egg salad. I think it’s the warm Mayo that has me dubious.

    My egg salad requires a creamy note (usually mayo, but I've also used hummus and other dips), a pickle ingredient (either relish or something like pickled onions), and an herb of some kind (cilantro/coriander leaves are my favorite, but chives or spinach are also great).

    If you’re an egg yolk lover, try duck eggs. They’re almost all yolk which is why they’re hard to separate.

    For my preference would be. After you fried ham and onions. I would've cut the onion stripes smaller. Cook all of your ingredients longer on lower temperature. Lid to seam as in your video. For me, after you flipped fried eggs into the bowl, underside of the fried eye is too brown for me. Give it that over cooked crispy taste. Lower heat and seam will not char the bottom. I like dill weed in my egg salad or celery seed. You might add smokey pimentos and make sure the pimento pieces are drained. Make your salad mush. Your voice is so calm to listen to. Lovely presentation. Your video was well done. Lighting was a bit dull. Hard to see the real end results.     People, people, people. Steam your eggs! Straight from the fridge. Do NOT overcrowd the basket. They will have issues where they touch. For hardboiled, 15 minutes in constant full steam. Then right into ice water for 15 minutes. After that, drain some of the water. Seal the container and shake vigorously. If that doesn't loosen/remove the shells, roll them gently on a surface. And start peeling from the air pocket end.
    Ground coriander, brown mustard, mayo, garlic, onion, salt and pepper in your egg salad. You're welcome.

    I add dijon mustard, celery leaves, and onion powder (I don't like the taste of raw onion). I leave the egg very chunky, and only add in the yolks once I'm satisfied with the seasoning, so the yolks maintain some integrity and don't become just part of the mayonnaise mush.
    I'm excited to try this version of egg salad!

    I put fried onion and fresh dill in my egg salad
