    JOLLOF RICE
    -------
    4 cups rice
    1 tsp salt
    1 red bell pepper
    2 seasoning cubes
    1/2 tsp curry powder
    1 cup water or (chicken/meat stock)
    3 tomatoes
    2 red onions
    2 tbsp tomato purée
    1 scotch bonnet pepper
    2 pieces of ginger
    4 garlic cloves
    2 bay leaves
    For Spiced Plantains
    ------------
    2 over Ripe plantains (the riper the better)
    1/2 tsp salt
    1 tsp ginger
    1/2 tsp onion powder
    1/2 tsp allspice
    1/2 tsp chilli powder
    1/2 tsp cloves
    Oil for frying
    For baked chicken
    -----------
    1 kg chicken drumsticks (or thighs)
    1 tsp salt
    1 tsp black pepper
    1-2 tbsp green seasoning
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1/2 tsp chilli flakes (optional)
    1 tsp all purpose seasoning
    1/2 tsp browning (optional)
    Bake for 1hr 20 minutes on 200•C basting every 20 minutes.

    The food may be different, but us Indians, pakistanis, ghanians, Nigerians, Jamaicans all kind of cook in the same ways a little bit, I’m sorry if this offends anyone

      I happen to be American and I’ve learned that what you’re saying is true. I visited New Delhi, India for sometime, my Fiancé is Nigerian, my friend is Ghanaian and my son was in the Middle East. Lots of similarities

    I agree with the comment below. I’m African & the only trick to Jollof & it’s color is tomatoes. For it being your second time cooking it, you still did a fine job 👍🏾😋

    Great job! Looks very tasty. I'm Nigerian and when I make my jollof to darken the red sauce you can:
    - frying the tomato puree first before adding the tomato plum
    - add 1 dark blended bell pepper
    - steam and boil down the blended tomato plum before making the red sauce/stew

      Yep I do mine the same way! It helps get rid of the tart taste to boil the blended tomato plum and onion mix until the water has evaporated. Check 9jafoodies jollof rice recipe on IG for the typical Naija way but yours looks great too and as everyone has said in the comments we all make it different so just find a way that suits you. I use golden sella basmati x

    Looks amazing. Jollof doesn’t always need to be red but if you want that you can use tin tomatoes and reduce the tomatoe paste until it’s a deep red. Personally It’s all about the flavour for me, so great job.

    To get a rich red colour on the rice you need to put more sweet red peppers such Paprika Peppers or red bell peppers. Keeps the colour.

      Fried plantain is still called fried plantain in Ghana. When the plantains are seasoned with herbs and spices such as ginger, pepper, etc., it is then called kelewele. 🇬🇭

    The way you make yours is pretty much how I saw it made in Ghana with the veggies from the local markets ...the only thing I do different is fry the veggies except for tomatoes and then blend and add back to pot before I add stir in puree , cook it out and then add plum tomatoes....I use stock from whatever meat I'm using...and I love easy cook basmati. Makes perfect separated grains ..

    Honey you did so so good, I mean don't let anyone tell you different. People telling you to add more tin tomatoes, more bell peppers more this more that. Before all this what were we using, my mum and grand mother used little to no tin tomatoes and their jollof was bomb.

    You did great.only need tomato paste and more more red bell pepper to get the real color of jollof rice...........West African cook it the same way but the difference is the garnish.

    I recommend not adding a lot of water to the blend for the stew (i typically use a little bit of oil instead ) the water and oil together is what causes the massive splatter so either use a little bit of water or oil instead

    I think instead of using water, boil the chicken before you bake it and use the water as stock instead of using water.

    The jollof is about the taste not really the color all West Africans make it differently some make it look golden, yellow, orange, or reddish color it depends on the ingredients.

      I know most of you might be adult but I have a say in this because I am Ghanaian. I think all of them are equal unless the taste is good. The taste is all that matters. Not the colour. The jollof may be bland or not even cooked well. So what I think is that taste is all that matters not the colour

    In future when making the tomato base or “stew”, don’t be afraid to add a little more oil, that’s what helps cook the base... and let it cook for a bit longer. Perhaps about 20-30mins long, or however long you need for the spitting to stop (that happens when it still has water in the mix)... you’ll also see that that the oil has settled at the top, that means your stew is ready, then you add the rice.
    Also try yellow pepper instead of red for flavour
    DON’T be quick mix it because some parts will be cooked and other parts will be uncooked... lower the heat and cover with foil or cling film, let the steam cook it through then after some minutes you can mix it.

      I second these tips! My mom always says to flip the rice not stir!! Otherwise, you'll have some parts cooked and others not.

    Terri-Ann people are going to give you 100+ different ways to spin jollof because everyone does it differently...some people use anise, nutmeg, etc. just do what works for you 💪🏾

    As far as I am concerned I think the rice looks very good because I don't know what it should look like in the first place so to me everything looks delicious

    Suggestion: Add more bell pepper into the mix with a little more tomatoe paste for a richer colour. 🙂
