CHICKEN TIKKA BIRYANI Ingredients Yogurt ½ cup Cumin powder 1 tsp Chili powder 2 tsp Salt 1 ½ tsp Turmeric powder ½ tsp Allspice ½ tsp Yellow color a pinch Tandoori masala 2 tbsp Green chili grinded 2 tbsp Lemon juice 2 tbsp Oil ¼ cup Chicken 1 kg (12 pcs) Ginger garlic paste 1 tbsp heaped METHOD Marinate all the masala in a bowl, marinate your chicken pieces in it and mix well, marinate for 2 hours. Heat ¼ cup oil, add marinated chicken with the remaining masala, cook on medium flame for 10 mins till oil comes on top, turn chicken pieces, add chopped coriander, mint and green chilies, cover for another 10 mins and let it cook till done, give dum of coal. Heat oil ¼ cup, add whole spices 1 tbsp, bay leaf, ani star, 2 onions sliced, fry till light golden, add 2 chopped tomatoes, fry well, add chili powder 1 tbsp, coriander powder 1 tbsp, cumin powder 1 tbsp, salt 1 tsp, tandoori masala 2 tbsp, lemon juice 3 tbsp with ½ cup water and fry well, cover and cook on low flame for 10 mins add in ½ cup yogurt, coriander leaves chopped 4 tbsp, mint leaves chopped 2 tbsp, Plums 10, green chilies whole 8, brown onion ½ cup. Soak sela rice for 4 hours, boil till nearly done, mix kewra water and yellow color, add on top of the rice, some brown onion and the chicken tikka pieces on top of rice, leave it on dum for 10-15 mins, remove chicken pieces, mix rice, take it out in a platter, top with chicken pieces, serve garnished with onion rings, tomato rings and lemon slices. Ingredients for Masala Oil ¼ cup Whole spices 1 tbsp Bay leaf 1 Ani star 2-3 Onions sliced 2 Chopped tomatoes 2 Chili powder 1 tbsp Coriander powder 1 tbsp Cumin powder 1 tbsp Salt 1 tsp Tandoori masala 2 tbsp Lemon juice 3 tbsp Water ¼ cup Yogurt ½ cup Coriander leaves chopped 4 tbsp Mint leaves chopped 2 tbsp Coal 1 piece Plums 10 Green chilies whole 8 Brown onion ½ cup Rice 1 kg soaked Screw pine water few drops Yellow color a pinch Onion rings, tomato rings, lemon slices for garnish
