Mahi aka dolphinfish, some places they’re called dorado. They’re actually the fastest growing fish as well. Male Mahi-Mahi (often referred to as “bulls”) have a much more pronounced flat, almost 90° forehead, whereas female “cows” have more of a rounded, tapered head.
We have them in abundance in the waters off Tobago, even Barbados, during the months Dec-March. II's a wonderful to see them flying in great numbers when sailing or fishing between Trinidad and Tobago on the north coast. And they taste nice, especially when freshly caught.

If you go on a cruise in the Gulf of Mexico, go to the very front of ship while moving and you will see them at the beginning of the wake. Thousands of them. It is amazing to see. But I didn't see any birds eat any. Pretty cool site though.

Generally it's lots of different shootings over a period of days, weeks or months spliced together to make it look like one seamless moment.
The producers usually spent their whole life filming, one docu takes years to completely film.
I saw an interview where they said it took months of waiting and watching to get one scene. Truly the greatest tv show ever

I've seen them while on the ferry from Trinidad to Tobago. Thought I was seeing things.
Here too in southern California. I remember seeing them for the first time as a kid when we took the ferry to Catalina island. Amazing 🙂

These flying fish almost killed me while I was kayak fishing at night in San Diego, I was being hit in head/ body, got almost knocked out
