It makes perfect sense about the flavor and the colors, how the lecithin sneaks it into the chocolate or batter and allow it to stay and spread. I cannopt believe I didnt know about this sooner. Chocolate by its own nature typically has a long shelf life if stored in a cool (not cold), dry zone. The lecithin preservation characteristic is really meant for baked goods. Are you having an issue with your chocolates?

and it is still true today. even for these "amazing" products out here on the market. some popular products needs some assistance from the lecithin. especially for those deep deep colors. plus time helps. so if you need deep color frosting make it at least 24hrs in advance

Using Lecithin is much like using cooking oil. Cooking oil doesn't noticeably alter taste and neither does lecithin.
