For the east conquest, I have beaten every stronghold and spot but it’s saying I have 122/123 and it’s not completely. What am I doing wrong?

Level them up
each player can earn parallel XP. this is done by getting XP with each individual player. stolen bases, hits, doubles etc

I’m new to this game just picked it up and I’m terrible at it.
It takes time
I was too, just play a lot of games on rookie & learn timing & PCI placement. Then gradually move up a difficulty.
Don't sweat it man. You'll get the hang of things rather quickly. Hitting is challenging for us newbies. I expect to be terrible with a bat in my hand.
As a veteran it’s pretty easy to get the hand of it. Just do lots of practice and get used to different swings and pitches
