Ingredients (सामग्री) :
For Dough:
2 Cups All-Purpose Flour (मैदा)
1 tbsp Crushed Semolina (सूजी)
1 tsp Crushed Carom Seeds (अजवाइन)
¼ tsp Oil/Ghee (तेल/घी)
Salt to Taste (स्वादानुसार नमक)
Cold Water as Required (आवश्यकतानुसार ठंडा पानी)
For Dal Filling:
1 Cup Soaked Bengal Gram (भीगा हुआ चना दाल)
¼ Cup Soaked Green Gram (भीगा हुआ मूंग दाल)
½ tsp Turmeric Powder (हल्दी पाउडर)
Salt to Taste (स्वादानुसार नमक)
Water as Required for Boiling (आवश्यकतानुसार पानी)
For Tempering:
2 tbsp Ghee/Oil (घी/तेल)
1 tsp Cumin Seeds (जीरा)
¼ tsp Asafoetida (हींग)
1 Dry Red Chilli & 1 Green Chilli (सूखी लाल मिर्च और हरी मिर्च)
½ tsp Red Chilli Powder (लाल मिर्च पाउडर)
¼ tsp Turmeric Powder (हल्दी पाउडर)
6-7 Ginger Juliennes (अदरक के लच्छे)
Chopped Coriander (कटा हुआ धनिया)
For Green Chutney:
1 Cup Fresh Coriander (ताजा हरा धनिया)
½ Cup Mint Leaves (पुदीना पत्ते)
¼ Cup Raw Mango (कच्चा आम)
½ tsp Amchur Powder (अमचूर पाउडर)
½ tsp Tamarind Pulp (इमली का गूदा)
1 Inch Ginger (अदरक)
1 Onion (प्याज)
4-5 Green Chillies (हरी मिर्च)
1.5 tbsp Jaggery (गुड़)
½ tsp Black Salt (काला नमक)
1 tsp Cumin Powder (जीरा पाउडर)
Salt to Taste (स्वादानुसार नमक)
3 Ice Cubes (बर्फ के टुकड़े)
Water as Required (आवश्यकतानुसार पानी)
For Serving:
Chopped Onion (कटा हुआ प्याज)
Chopped Tomato (कटा हुआ टमाटर)
Chaat Masala (चाट मसाला)
Green Chutney (हरी चटनी)
Sweet Chutney (मीठी चटनी)
Fresh Coriander (ताजा हरा धनिया)
Lemon Wedges (नींबू के टुकड़े)
Green Chilli (Fried or Roasted) (तली या भुनी हरी मिर्च)
