I bike all year in Sweden, I do recommend studded tires even if it makes cycling exhausting. But it’s also wonderful, the quiet and emptyness. I agree about 1st of December for the Christmas tree, need all the shining lights in the darkness

Seoul sounds a lot like where I live in the states. The temp changes so fast. I have not ridden my bike in years until this summer again. My winter clothing selection needs to be built up a little. With a high of -5.5 C° today I think I need to get some merino wool to create my base layer. After that I am not sure what I will need. It will be fun to figure it out all over again. I live in the PNW and recently discovered the wonders of wool outerlayers! I have a pair of wool pants and a wool coat which I wear over some long sleeve base layer/midlayer things to keep away from the scratchiness. Wool is special because it will continue to keep you warm even if it gets wet (unlike down puffers) and it still does a pretty good job of making moisture just roll off if you’re in light/medium rain. For all but the heaviest rain I prefer wool over a rain jacket because wool is far more breathable than any jacket, and ponchos do provide airflow, but are a bit of a hassle while cycling.

Mudguards are more important than clothes in the UK. Mudguards, waterproof jacket and cap. Trousers that dry quickly, like hiking trousers. I usually brought a change of clothes with me when I commuted in wet weather back at home.

This Sunday I rode from Asan to Pyeongtaek, ~50 km round trip. It's fascinating how microclimates work. Asan was mostly snow-free and nearly dry; the Pyeongtaek bike path along the Anseong River started out OK, but at the halfway point, degraded to awful slush. Since you're going to talk about winter gear, have you ever used lobster gloves (삼지장갑)? Bought a pair in Chongno recently and tested today; seem much warmer than regular gloves.
I tried riding my mountain bike in winter once. I used low pressure tires for grip and was riding very slowly and carefully. I tried going up a small curb from the road, the rear tire slipped out to the side from beneath me and I fell onto the sidewalk. Maybe I was riding _too_ slowly, but I probably won't try to bike in snow again unless I use a fat bike 😅
I recommend you try riding the bike you have in the snow again before buying a whole new bike. Different types of snow provide super variable riding conditions, even if on a fatbike. I think next time it snows you should try it again, just be careful and go easy on the curbs :) I love riding in the snow on my mtb

The seasons here truly just go from 0-100 in a few days it kinda messed with my sense of time lol. Campus life was amazing with the snow. I was just getting into snowball fights with friends and random people in between classes. I stopped using the public bikes after it started getting colder but I'm thinking now I should hit up a bike path before the semester is over and I have to leave :(

Does it ever get snowy and icy enough in Seoul to need studded tires? You don’t ‘need’ them to commute here (Minnesota, USA) most days in the winter, but they are nice to have. And there are definitely some days where they are the only thing keeping you upright.

I would love to live somewhere like southern Spain where it is still warm throughout winter but I would be interested to experience a "dry" winter... a lot of people from North America and Eastern Europe say British winter's feel colder and more unpleasant even though the temperature is higher, just because of the dampness that pervades here
We only get maybe 2 days of 1”+ of snow where I live in the US and people try to make those 2 days as the excuse for not making cities more bike friendly. Otherwise the weather is nice and dry and almost never dips below 20F, which means it’s perfectly bikeable and nice for riding.
Build the infrastructure and people will use it, whatever the weather. Just look at Scandinavian cities, Copenhagen in particular. I was there last winter in the snow and there were thousands of people getting around on bikes.

Wool for sure. I like a down vest, keeps the body warm but my arms can still move freely.

None of my tires are the best for snow but it's not regular enough for me to change. Studded tires would be ideal for regular snow.

Haven’t tried them. I like my Danish leather gloves and then sometimes use the Bar Mitts when it gets really cold.
I have the same light you have on the handle bars of the Clem… fairly decent, got mine on sale, can’t complain.
