I hope that you are seeing this but i might have a solution for the spinning. I built a plane once and it had the same kind of thing that happend, when i turned it would just drift and turning was just impossible. The problem was that i didn't add any kind of tail, so maybe you should add an hidden tail somewhere. It fixed the drifting so i hope it that it helps with the spinning!

I literally made a team of arwings on Plane Crazy, I mean me and my friends all have arwings because I tought them how to build it and we always rule the pvp skys only because the speed of it is unbeaten for some reason even tho it's powered by 4 super rockets. Maybe I can teach u.... =/
Yo I made the Assault Arwing, The Snes Arwing, the Landmaster, the Great Fox, and so much more in this game! And they all fly (not the landmaster of course) and no motor locks required because idk how to do that :P I tought 7 of my friends to build the arwimg from assault and I even have some of the Star Fox 64 bosses. Oh and let's not forget the BARREL ROLLS!!!
Theres a concept why this does not work since theres wings that are on the side that are horizontal... and only horizontal the only way to fix this is add a bigger wing like the b2 bomber style and if you look at fighter jets they have these things on tail that face up why? because when you remove them and then try to turn theres nothing stopping that turn so it just keeps going and does that i recommend making vertical facing wings.
Welp, is kinda a good build but it doesnt fly well. Dont make it super fast and probably add a control surface fin in the motor lock. If it didnt work welp im sorry

I made my own jet and I call it a cheese jet people laughing on my jet cuz of that it's badd at flying and it keep broken but my cheese jet got an upgrade it go faster and stable with some motorlock bomb,rocket,guns and I make a second jet same as my cheese jet (v2 jet cheese) is more powerful it can turn fast and a cutter

I made a working version that has wasd + mouse can transform into walker

You should make a swash plate helicopter it’s a little bit harder
The reason it doesn't fly well is because the main pilot seat wasn't being used and the roll when you are in the pilot seat is unlimited
The reason all please have a rudder is to stop the spinning u need some kind of hidden rudder
